Large crabs -found in Indian stores, occasionally
Crab curry varies from country to country, household to household, here is my version. Sorry, I cannot provide measurements, its an Asian thing
Dismember crab, and cut the body section into 4 parts, sounds ghastly, I know!
Add adequate lemon juice to the crab, and leave aside
Prepare a tomato based curry.
Oil
Chopped Onion,
Grated Ginger, Garlic
Red chillies
Black mustard seeds - for 1 large crab - 1tsp
ground Cumin Powder - for 1 large crab - 2 tsp
Tumeric powder for 1 large crab - 1 tsp
10 curry leaves
simmer until onions brown slightly
add canned chopped tomatoes
2Tablespoons Tamarind concentrate - more or less to your discretion.
cook, until you have a sauce.
On low heat - add crab, mix, cover with a lid, let simmer for 5mins, not longer - over cooked crab is powdery.
Add chopped Coriander, and more lemon juice, if desired.
Enjoy with Naan
