Yes. But yes you can if it's feasible. I worked at a place we got American Maine Lobsters in fresh counter to counter service. If it profitable it can be done.

And to answer Adrian...why would anyone cook off a batch of fish in advance? Sounds horrible.

Lack of interest, lack of training, cooked by people who are used to preparing doner kebabs and who probably never even ate one portion of fish&chips in their lives. At a guess.

It's one of the things I first noticed and found disgusting coming to Europe. ...was all this pre made stuff that is only good made fresh. Pizzas, Fougasse, Deep Fried Everything. Not saying America doesn't have its pitfalls but I am not used to seeing things cooked en masses in advance that everyone knows will be bad. And possibly make you sick.

I once bought some fish and chips in London back to Lugano. The cabin of the plane stunk and even customs at Lugano didn't want to open the bag! I reheated it in the oven and it really wasn't worth the effort - or the looks!

The Irish Pub in Sorengo does a great fish and chips. Crispy batter and great fries. They even have Sarsons malt vinegar.

Yes you are totally right. Can you imagine in my local town Kidderminster, on Station Hill we have a fish and chip shop that has won many awards for its products. It has the best crispy battered fish you could imagine with soft flaky bright white fish inside - with chunky crispy chips that make your mouth water and to finish it off a wonderful pot of mushy peas....mmmmmmm to good.... so yes i totally agree GOD E english food is the best!!!! So no advice where in this wonderful city of Zurich to find such high class cuisine?

There^'s the Rock n Salt airstream food truck I know of . I think he was the one mentioned earlier doing this side of CH. Super nice Aussi guy! Can't wait for his season to start so I can try them out!

Thanks for the link. Will be on the lookout for this guy in Lausanne. Filets de perche, as good as they are, just don't hit the spot compared to a decent fish n chips!
