Tomato paste, yes (a spponful or so), tomatoes, no.
As I said, unless you are not Italian. Do you also put cream in carbonara?

I make mine from tomatoes, and so do all the Italians (real ones) I know.

Tom
| | | | | I made carbonara two days ago and no, I did not put cream in it.
I ought to add that when I make game pie, I don't add swan, blackbird or heron. It's still a game pie though.
People move on, things change, tastes change, people adapt. Who actually cares whether a recipe is totally authentic or not (and that itself is debatable as most Italian families have their own recipes for these things with slightly different ingredients).

Tom | | | | | I make Bolognese with tomatoes and Carbonara with cream.
I learned to make both by watching my Italian mother, nonna and bis zia.
Pray.. how do you make carbonara?
Regarding the initial subject, it is determining element to keep both the offending product and the tin itself so that the manufacturer knows which lot and batch and can trace it through the supply chain.
Also note that large manufacturing units may produce for several different customers which may turn out to be competitors (for instance the manufacturer could supply the same product to different supermarkets using that supermarkets labelling and packaging). Thus hypothetically more than one customer/supermarket could be affected by issue, hence the importance of the lot and batch.

I was born nearer to Italy than you! | | | | | I have noticed that many recipes contain tinned tomatoes, actually. To be honest, this is among the last things I eat or would like to eat from the Italian cuisine. Minced meat with tomato something and pasta on top of it all, is somehow off-putting for me. I like a lot of other things from Italy, not this one though.
Carbonara is usually made with cream, what do you use? Can yourecommand a recipe? (I avoid cream not because I don't like it, but because I have weird reactions to some diary products) | Quote: | | | | | People move on, things change, tastes change, people adapt. It depends a lot on which region or even which particularly place some recipes come from. Italy is not really that different from other countries in this regard...

Well, in the original carbonara recipe, there is definitely no cream. As there was none in most traditional Roman dishes like caccio e pepe, gricia etc. The creaminess comes from the guanciale or pancetta and the cheese (pecorino and/or parmigiano).
For once, Wikipedia outlines it rather correctly https://en.wikipedia.org/wiki/Carbonara
Of course, as with many things in Italy, personal variations etc. exist | The following 2 users would like to thank jjake for this useful post: | |

Tom | | | | | It's amazing where you end up on google after reading interesting posts on this forum. Apparently, according to Accademia Italiana della Cucina, the registered recipe also contains milk, with an optional full litre of milk after cooking.

Thanks, st2lemans.
I also checked on the internet "Antonio Carluccio" (this is an Italian chef whose films my food loving husband has watched many a time) and "Carbonara" (as this isn't a recipe we cooked many times at home for reasons I mentioned above) and found this simple, classic Roman recipe. https://www.youtube.com/watch?v=3AAdKl1UYZs
You can actually make it only with Parmigiano, that's good.
