Pfff, I was in New York when an American started chatting me up, he asked me where I was from and I said Peru. He said Peru, where is that? I said that is in South America...He said, oh I am from South American too, I'm from Alabama

I found it strange to realize that the one in Shreveport had served as a USAF colonel (accdg to the ob in the end even promoted to Brigadier) in the War in Korea

Eh, the answer has nothing to do with Hong Kong, Japan or is in any way related to the topic: China had a civil war and split. Like other countries before (Vietnam, Korea) only with the difference that they split into a huge part and a tiny one. Some wonder why Mao did let this happen.
So in essence, yes, Taiwan is historically and culturally a part of China and populated with over 90% Han Chinese whose parents and grandparents moved there during the conflict. The country made some smarter decisions than the bigger part and therefore enjoys a higher quality of life and more freedom. If it was the other way around, the countries would probably had a reunification long ago, but as it is today the country will remain split until the PRC has something to offer to the Taiwanese. They carefully look at Hong Kong and the developments there... and are probably not that impressed.

Mao did let it happen because he and his Communist Party during the war were in a kind of coalition with the Kuomintang of General Chiang Kai Shek. The establishment of the "Republic of China" on Formosa/Taiwan was a kind of compromise between the two to end the endless civil war

I presume that the two formidable leaders realized that if they continued to fight each other, outsiders as in the past would take profit.

It can further on be taken as most likely that the PRC would/will accept an independent Republic of Formosa, but neither under the name of Taiwan nor under the name of "Republic of China". As it is exactly that pre-1949 (Nanking) name ROC which angers the chaps in Beijing

In view of the discussions above about China (Hongkong) and Japan, it is interesting to note that

It may not be renowned for excellent service but it's about 500 million times better than anything I've experienced in Switzerland!

My demand stays the same. The majority of Swiss businesses have no idea what service is.

It's the same reason why I think a small tip for service staff is a good idea. If there is no incentive to give good service then why would the person give good service?

IF the service IS really good, a tip usually is given.

But, to answer your other question.
Why would a person give good service ?
A) in order to have you as a customer again
B) in order to sell more
C) in order to create a pleasant atmosphere

I actually DO find good service in quite many shops all around here, and in quite many cafés and restaurants. I don't know where you find the good service level you demand or wish. If you are one of the owners of a company than it is your job to motivate the personel, if you are a customer you can contribute by your behaviour. In both roles you can ruin the main by being grumpy and negative
