I don't buy the cheese coagulating nonsense either. Booze is great for greasy food, hence calming the gall bladder fit a lot of people have after fondue/raclette (kirsh shots). It's gall bladder people struggle with, not cold drinks in their tummies after too much greasy and hot cheese. Me thinks.

Okay, so, taking all this in, perhaps the hot tea my m-i-l gave me wasn't the best idea (whodathunk? ) and I should have had coke (which did, after all, settle my gall bladder) or else wine with the raclette and fondue.

As that's not a problem for me anymore though, I still bet the alcohol / coke may still be a way to go with such meals as even without that particular organ, my tummy is still a bit unhappy with lots of cream or cheese.

Acids are acids. pH doesn't discriminate. And the phosphoric acid in coke is rather quite small, about 10 g per gallon of syrup (the syrup, not the final product in the can). People can keep rationalizing all they want. Sure, if you drink it all the time the sugar will make you fat and it's not good for your teeth (the sugar, not the minor amounts of acid) if you don't brush regularly. Alcohol kills off brain cells, a known fact, and I don't see anyone advocating that we should stop drinking wine or beer or whatever. Don't you find that a bit too much of a double standard?

Sorry pH, things aren't that simple. Saying acids are acids (suggesting they all work the same at a given pH) doesn't exactly hit the nail on the head, to put it politely. pH is only one aspect of acids. I hope you will agree that ingesting ascorbic acid or prussic acid at the same pH makes quite a difference.

In dentistry, orthophosphoric acid, the same as in Coke, a.k.a. E338, is used to condition the enamel of a tooth before applying an acrylate filling. It is one of the most effective agents to safely etch the enamel, causing millions of tiny pores which then get filled with liquid plastic, which polymerizes to form millions of equally tiny tag that keep the plastic sticking to the enamel.

Granted, the concentration of the orthophosphoric acid in Coke is much lower, but just like fruit acids from apples, oranges etc., it still attacks the bare enamel, which makes it much more prone to abrasion for a while (up to an hour or two). The result of brushing briefly after consumption of orthophosphoric or fruit acid is erosion in formerly smooth tooth surfaces, causing deep grooves that exactly show the direction of the tooth bristles. It is a frequent problem.

Ask around. You'll find many people that have sort of a rough feeling when grinding their teeth shortly after a Coke. That's the rough surface (pores) caused by the acid. It's not the sugar. Sugar acids are produced by plaque bacteria, which do not sit on the smooth surfaces but in occlusal fissures, along the gum line and between the teeth, and that's exactly where erosion does not occur. The effects of sugar acids in those places is called caries.

By the way, the pores in the enamel get repaired by minerals provided by the saliva. It takes between half an hour and two hours for the smoothness of the etched surface to recover. That's why brushing the teeth too soon after taking in acidic stuff is discouraged by dentists and hygienists.

Ok, I think I am not too worried. Thanks. Like my coke when I feel like it, not too often, so do my wine, also not too often, and sometimes, gasp, as good ol' Czech, I have coke in my wine, or wine in my coke?

Now, I just read today about alcohol actually not having any good effects, since the previous studies were short term and didn't deal with over all, long term effect. So, now, it is considered bad, carcinogenic, in long span (breast, larynx, aesophagus, tongue, colonic, etc.). All these conflicting ideas, formerly people were saying how it immediately positively boosts blood pressure in notoriously low blood pressure people, good for cells, the dye in red wine is good, beer for Bcomplex, yady yady, now no booze is the healthiest. I kinda see the point, loads of people around me here do not touch it and are quite healthy and happy..
