Looking for a butcher again (ZH/AG)
 
So, our Fourth of July party has taken on a life of its own, and I thought I should ask if anyone knows a good butcher, as in, one that actually butchers meat, rather than distributes it. Until now I've been buying from Braunwalder in Wohlen (not bad, really, but they do a St. Louis cut on the spare ribs rather than a full cut, and the ribs tend not to be very meaty). maybe someone else here has a better recommendation for someone that does it in a more, well, American, sense?

This is not a recommendation but some Butcher were you may get lucky if you ask the right questions, and have a good chat with the butcher.

Yeah, I did a similar search. I was just hoping someone had personal experience of some sort. Not that I mind spending time on the phone talking about meat...

These guys are very good and very reasonably priced, somethings you can special order on their website sometimes it's worthwhile just going in to see what they have on a particular day.

For the benefit of anyone that finds this post later - and as an extra thank you to ASwissInTheUs -

I would up going to Huwyler (http://www.metzgerei-huwyler.ch/prod...lachthaus.html), and they were able to help. They normally do their pig slaughter on Monday, so it helps to call at least a week in advance, but they had some cuts on hand that I wanted, and I think the guys was pleasantly surprised to sell me 300 CHF worth of meat. The place doesn't look like much, but it seems like they can produce damn near anything from the back. Would definitely go back.
