I relate to this post because while I love the coffee culture in Switzerland sometimes I just want a very large coffee, which for the cost needs to be drip or filter coffee.

Looking forward to finding some good options next time I'm in Zürich.

I'm a coffee snob.

I always try and support the little guy and also despise Starbucks, BUT - when I started a new job recently in Wallisellen, Zurich I tried all of the little coffee shops and they all use UHT long life milk, which tastes chemical and disgusting.

When I ask them 'Do you use fresh milk or UHT?' they look at you as if you're mad, they don't know the difference. So, I went to Starbucks because they are the only purveyors of Caffoline that use fresh milk.

In a nation of dairy farmers I'm constantly amazed by the lack of preference for fresh milk.

Probably a storage thing. You don't need to store UHT in a fridge. Starbucks probably has more fridge space. I can't stand UHT in tea but in coffee I can't tell the difference.

Also, I'm guessing in the artisan coffee shops they are more amazed that someone actually wants to add milk to their coffee in the first place. Another reason for keeping only UHT on site for the handful of customers that ask for it.

We're not at war. If other countries can do it, then so can Switzerland


Any catering service should understand how to deal with perishables and inventory. Especially if they're a coffee shop.

How many litres do we use a day?
How long does a bottle of fresh milk last?
How many litres should we order and with what frequency?

If it's a coffee shop then they know that steamed milk for example must start cold to begin with, plus they should have turnover so having a counter fridge is a no-brainer. It's not any matter of availability or logistics, it's bunker mentality or a palate destroyed by the use of Maggi Aromat or smoking.


I have no idea really, it leaves me confounded.

But probably filter coffee is seeing some sort of revival, who knows. I'm actually a bit surprised someone is looking for filter coffee tbh, but then again I wouldn't say no to a good cup of Turkish coffee so....each to their own.

This bunker mentality is persistent, but then growing up hearing that 10dkg of salami should last at least a month...

It's just about costs here, tbh..And not wasting. Wasting quality farm milk is a crime that nobody will attempt (calculating risk is a culturally conditioned skill or value). I agree that uht is gross, I can't put it in my mouth anymore. Black coffee will do then, try it.

Turkish coffee is by principle the opposite of filter. Hahahaha. What's that mud on the bottom of the cup called? They call it lógr back at home.

It is not only high on caffeine but also on carcinogennic bits that roasting and washing in hot water for quite a while creates.

Who said it is? People can look for all sorts of "retro" things - that was my point.

Yes, filter and Turkish are quite the opposite extremes and I know only few people who still drink these types of coffee. My parents used to drink filter coffee in the '90s, it was a fashion.

Yes. In English is called coffee grounds, in German - Kaffeesatz.

Btw, grilled meat, vegetables etc - for instance - have "carcinogenic bits" too and you don't hear many people saying they're not going to eat any because of that...for me a nice cup of Turkish coffee is a very rare treat and only when I visit some places. I don't worry too much about those bits.

The acrylamide story was another one of those research papers published which was obviously not read in full or understood by the average tabloid journalist.

They did see the word cancer though (the research was carried out on mice) and had a field day. The false extrapolation they published was devoured by the general public and to this day, everyone seems to believe that you're going to get cancer if you have a bit of burnt toast.

There's no firm evidence to support this (in humans at least). There may be in the future but there isn't now.

There are plenty of reasons why people should reduce their crisps/chips consumption for improvements in health but this isn't one of them.

There's not much harm done in this case - I guess toaster manufacturers have taken a bit of a hit but once these stories are out there, even if they have subsequently proved to be totally false, people still believe there's 'no smoke without fire'.
just look at the Wakefield MMR/autism tragedy.

But just to be on the safe side and and based on my years-long research I would strongly advise people to take enough flavonoids in the form of wine on a daily basis to fight those nasty acrylamides.
