Cornmeal = What in Switzerland?

I would like to make some corn bread but have not found corn meal. What is it called and is it usually only found in specialty shops or the local Coop/Migros?


I did a search and did not find anything about cornmeal. Thanks!

I think it's generally called polenta even in the grain form, and it's in the pasta/conserves section on leshop.ch...

I always use polenta, which is just ground corn. You can use the finely-ground stuff, but I prefer the medium-ground for a bit of grit. You just need to make sure you let the liquids soak in a little longer before baking.

Oh, and my cornbread is divine.

I think Maizena might be cornmeal. But I'm not sure - is cornmeal the same as cornflour because I think that's what Maizena is.

No No No. Stay away from "Corn flour" or Maizena. Maizena is corn starch and "corn flour" is way too fine to make good cornbread out of.

Yes - not Maizena!!

Rather the very fine polenta from Migros or you can also find it in Bio/ Reformhńuser,

i have also bought fine corn flour from various turkish grocers over the past year - they sell in 2.5kg bags and it is usually less than a franc a kilo...

Any Turkish shop. Huge bag, 5 francs, enough to last you a year. It's corn flour, very yellow in color, and I have used it for cornbread, works great.

It's called
Semoule de Ma´s
or Maisgriess
and you can find it easily in Coop or Migros.
I usually follow the QuakerOats cornbread recipe with rather nice results.

Lovely warm cornbread at this time of year

Following Sky's lead... here is the recipe from the Quaker Yellow Corn Meal box.
  • 1-1/4 cups all-purpose flour
  • 3/4 cup Quaker Yellow Corn Meal
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt (optional)
  • 1 cup skim milk
  • 1/4 cup vegetable oil
  • 2 egg whites or 1 egg, beaten
DIRECTIONS
Heat oven to 400 F. Grease 8 or 9 inch pan. Combine dry ingredients. Stir in milk, oil and egg, mixing just until dry ingredients are moistened. Pour batter into prepared pan. Bake 20 to 25 minutes or until golden brown and wooden pick inserted in center comes out clean.
Serve warm.
9 servings.

You should buy the Riesal Mais fein or grob--its usually used to make Polenta, cooking time is about 3 minutes--its exactly the same as Cornmeal.

Really, I'll have to have a look. I used to like having some cornbread with some meals, but the one time I made it, it was very dry and I haven't bothered again as hubby isn't that keen. Is that just in the 3M's or would it be in the smaller shops too?
