Did you find something by now? I just wanted to say, Mühlerama as recommended above, has really good courses by dedicated bakers (professional and very skilled amateur bakers). I visited Weinheim 3 years ago for a diploma in german bread making for 4 weeks. It was really interessting and the target group were mainly amateurs or hobby bakers but we had professionals from all over the world, really good hobby bakers, chefs and those who wanted to try themselfes out. For someone who has not worked on production level, it will will be a really good and prob. new experience. Though, there are may ways leading to Rome, saying that, many bakers have different opions and approaches, but have a great result after all. After Weinheim i worked in a small bakery to gain some experience. They are usually keen to get people on board. Doing everything by hand is a bit a romantic view, they have to produce big batches, hence machines other than mixing to support certain steps are not a bad thing. Its much more about the ingredients and time you'll give to the dough. Good Luck!
