Do you happen to include the rent deposit account when you fill your tax declaration form? I know that it should be included being own money in there, but I wander what's your view on that.

Yes, it should be as it is your money.

You have to! Otherwise you will have to pay a penalty if the tax authorities will find it out themselves and you didn't mention it.
