Black-Scholes model, or last trade price or last bid/ask on last trading day. The latter can be hard to find on the internet for free, but for the right price it's totally not a problem to obtain.
If you're filling taxes yourself, just fill in your best guess. It's not a problem if it's wrong. They'll either accept it or correct it.
