Coop sells essences. "extracts" which don't come from the substance, but are synthetic. They come from Dr Oetker in little vials which are on a card. I know they do bitter almond, rum, and a (nasty, in my opinion) butter vanilla. I've never used coconut extract before - I just use the desiccated stuff.
Any chance coconut milk or a coconut syrup would work? Something like
Monin syrup (adjust liquid/sugar in recipe) - I know Jelmoli has quite a wide range of these syrups in different flavours.
