vegan pie crust recipes? any ideas?

i'm making a dinner/desert party tomorrow and there's one vegan in the bunch. dinner is easy as i'm making yummy picadillo de papaya (no animal products for the vegan) but i'm planning on making a pumpkin pie with our last lonely pumpkin and i'm stuck on how to make a pie crust for it, with out butter and not being able to get ahold of crisco (veggie shortening).

i've heard about using olive oil instead of butter but i'm hesitant of the results (flavor, etc).

anyone have any recipes/experiences/ideas of a somewhat easy non-animal product way to make a simple crust for the pie?

I just made a pumpkin pie last week. Gluten free in our house but it must have been vegan as well. I used some Kokosfett (Graisse de noix de coco). Brandname: "Sais ASTRA COCOS" found at COOP next to the olive oil.

Olive oil pastry works very well with many vegetables . . . It's often used in Provencal.

I use Richard Olney's recipe. It's reliable and tasty. You can find it here:

I've heard of coconut oil being used but have yet to try it myself.

This place uses it http://www.babycakesnyc.com/

I have their cookbook and it contains a pastry recipe for a vegan and sugar free apple pie that looks delicious! It uses coconut oil, spelt flour and agave nectar.

I found some the other day at my local Coop

Let me know if you want the recipe and I'll email it to you (I'm unsure about the copyright laws in regards to posting it out of a book)

yea- i think it's the same though- it is like a crisco consistency when cool and heated up becomes like an oil?

did that once ( unknowingly) to my father in law. i made a delicious butternut squash soup (didn't realize he was vegetarian (it was the early stages) and he loved it! when he asked what was in it, he was happy until i said chicken broth and i think i was more upset than he was- my mother in law said next time just do the same recipe and don't tell him!

I nearly, oh so nearly, wrote some snarky comment about the fact that it might actually make them smile (before knowin what's in it), but resisted. Wish I hadn't.

I know this is completely intolerant of me, but I can't stand people who have a bunch of food requirements - unless of course medically required - which makes it harder to entertain them. You must seriously like this person.

I do, of course, exclude myself from that list, and would ask that anyone inviting me to a meal make sure they don't use celery, leek, kidney, tripe and liver.

You've named the only three things I don't eat in celery, leek and tripe. But come on, you don't like chicken liver pate?

On topic, there are a few veggies in my family but I've always used butter to make pastry, occasionally using vegetarian shortening or olive oil depending on the type. I once gave a long time veggie some chicken broth in a lentil soup (I cannot make lentil soup without chicken stock!). He was vomiting all night because his body had lost the ability to process meat protein (or something).

I'll accept the pate, preferably with warm buttered toast.

TBH, I can just about cope with veggie, as a lot of the food we cook is veggie anyway (cost of meat in CH and all that). But vegans...

i don't mind the challenge if it's someone who just has a strict general diet- like veggies or vegan, but i can't stand picky eaters who just "don't like" something. also invited another friend who eats meat but hates- cumin, green vegetables, anything unusual- as in not pasta, meat and potatoes with minimum spices. my picadillo is the easiest and yummiest thing to make veggie and non-veggie so that's what gets ... you can't please everyone and the vegan actually offered to cook his own meal if it was too much work to do- that's a thoughtful vegan...and that's why he's invited to dinner...

Not me! I also have issues with people that don't eat certain things (even I'll eat leek etc without complaint) but just because a vegetarian names his prejudices, doesn't make it less annoying! A veggie is someone who doesn't eat pork, scallops, chicken (etc).

You've got to love a dinner guest who brings his own dinner!

I say cook for the vegan and let the picky so and so bring his own ham sandwich (I'm guessing that's all he eats)

Ah but a vegetarian is so easy to cook for... just whip up a huge pot of minestrone (with vegetable stock) and then make a roast or some other delicious meat-based meal for everyone else

It's the picky so and so's that get my back up... especially the ones that don't tell you what they wont eat until they arrive and you discover that it wipes out your entire menu! At least the veggies and people who get sick when they eat certain foods make sure to tell you and offer to bring their own food

exactly the plan! the way we found out how picky he was was last time we invited him and his wife to dinner- my dear husband cooked a delicious potatoe thing () that was absolutely covered in cumin (he's french and over zealous with spices!). our friend was literally picking off each bit of cumin- it was hilarious but a bit sad too. so, picadillo has no cumin- but lot's of papaya .

i was always taught to eat what was on my plate, esp as a guest- and even if you don't like you still say thank you and keep your comments to yourself .

vegan though, i don't mind- gives me some kind of a weird challenge
