Re: Tonight's dinner?

Yesterday, I went to El Maiz for several things and made a big old pot of mole - tons of dried peppers, Mexican chocolate, spices like coriander, cumin, vanilla, cinnamon, some almonds and raisins.....other stuff too. Whizz it up in the blender. Mmmmm

Today I'll cook some of the paste with some tomato purée, onion , etc and use it to very slow cook some beef. Crunchy salad and tortillas. Perfect to eat in rainy yucky weather.

Re: Tonight's dinner?

Sunny and dry here.

So, sushi tonight.

And Aji poppers, as I've got to use up the Ajis while still good. They last a long time, but they're two months old and probably won't last till Christmas.

Tom
Self picked porcini? (or bolets as we call them here)- only self-picked will do here as per family tradition The stuff you buy is too often horrible quality and hugely expensive.

Rabbit in Jura wine (rabbit from a farmer friend- good husbandry and feed), red cabbage Irish style and potatoe gratin fermière (made with stock instead of cream).

Beef Fajitas. I found flake steak when we were shopping in France yesterday. I can't wait!

To bad we're still in temporary housing and I don't have my cast iron to cook it in.

Re: Tonight's dinner?

Tonight, I'm going to attempt a bolognese (bolognaise?) sauce that I found a recipe for. The recipe received excellent reviews, so I'm hoping it will turn out at least as good as my Italian mother-in-law's is.

Last night I made a strata (with ham, zucchini, mushrooms, cheese, etc.) that was tooooo good. i.e. no leftovers.

In Italy we get them for EUR 15/20 per kg (fresh).

None around here this year, even over the border at the cousins.

We did get 3.5 kg of parasol mushrooms in September, though.

And, I'm soaking a chunk of beef that I corned this week, will then dry it and coat it with some spices, then smoke tomorrow to make pastrami.

None here either- or they are under the snow. Ours are all dried and kept in tins- with the parasol mushrooms, the St Georges mousserons and morels (spugnole) from the Spring, and so many more

What is an Aji?
A type of chile from South America. Very fruity taste, and very hot.

I have them in the garden most years, but this year was a disaster.

Fortunately, they can be had at http://www.americanmarket.ch/ (as well as rocotos an limas).
