Re: Tonight's dinner?

Ham bone soup (made with the rest of the partial ham we brought back from Trieste Monday).

Tomorrow, 8kg turkey (brining at the moment), with the usual side dishes.

Re: Tonight's dinner?

Rib eye steak, thrice cooked chops and portobello mushrooms. As demanded by my 12 year old son! Having a budding foodie is an expensive business

P.s. He asked that the chips be cooked in goose fat

No, the other (7kg) ham is boneless.

We also got this one, and as it only had about 2kg of meat left on it, it was EUR 3.50/kg (normal price 22)

Leftovers from Sunday's turkey, with croquettes made from some of the leftover mash.

Onions and green olives sautéd in olive oil and Harissa paste, added fresh tomatoes and reduced to make a tasty spicy sauce. Oven roasted vegetables mixed in with cous cous and a spash of lime juice and fresh coriander.!

Probaby leftovers.

Meanwhile, I'm cold smoking scallops, salmon, and tuna that I brined last night for New Year's day.
