Do you know how to prepare kidneys?

It's a lot of work for cow/pig/lamb (rabbit is easy), and if you don't prepare them correctly .

I made three roasted vegetable stromboli (two with mozzarella, one with goat's cheese). I even made the dough from scratch.

I'm living in sheltered accommodation with 8 other residents, 8 of us were present plus two members of staff. I thought I'd made enough for 12... but it all went!

I've never tried to make a stromboli from scratch including dough. Always worried the dough would turn out gooey. So well done, you!

Do you guys know where I can find chicken liver? I saw frozen ones in Coop but would prefer fresh...

It is quite a wet dough to start with, but when you knock it back on a floured surface prior to adding the fillings, it turns into an elastic dough. The other trick is to avoid fillings with too much moisture.

The first one I made did get a bit torn and messy because I overworked it trying to 'pat' it into an oblong. The other two I used a rolling pin and they turned out lovely.

Local Asian shop, ironically owned by the brother of my wife's ex.

Meanwhile, steamed mussels tonight (EUR 1.50/kg), plus prepped a kg of anchovies (EUR 6/kg) and soaked half in lemon juice, fried the others and made them in saor. Also roasted a chunk of veal for tonnato later this week.
