Dinner has been interesting the last week or so.

For last week, I've had either flavoured canned tuna (warmed up) with roesti, or packet tortellini with cheese, brussel sprouts and beurre noisette.

This week, with one evening at Migros and the prepacked meals all being slashed at least 50%, I stocked up. So this week I've been sampling some of the range. I've had the Pad Thai with prawns (alright), the risotto of quinoa (not bad, quite creamy) and tonight was the meatballs (a bit like rissoles, for those in the know) with carrots and mashed potato.

That last packed meal I believe was on a standard 'Action' special last week - they had stacks of it each day, so I believe they decided the only way they could get it going was to cut the price even more.

I had a disaster today, made lasagne (packet pasta, but made my own ragout and bechamel) it was just a massive fail -_- it was horrible!

Mussels cooked with vegetables and white wine, sweet potato fries, bread, aoli. Leftover mussels and their cooking broth will be tomorrow's soup for lunch. Got a kilo of Dutch mussels for chf 8, hardly any had to be tossed.

Still working my way through packet meals - tonight was lemon ricotta ravioli with cherry tomatoes. Served with some blanched Brussel sprouts.

Considering how much meat I used to eat in my home country compared to now, I'm surprised haven't gone crazy yet. I feel just fine!

Flatmate made a fantastic butternut pumpkin soup for tonight, served with parsley and crusty bread.

The leftover Hollandaise from brunch was used to adorn some blanched Brussel sprouts and wilted spinach.

Made waffles today... Like real big ones from 12 eggs which I basically had for breakfast, lunch, and dinner soon yummy and soon full sine I also made plum compote

I cooked mutter paneer bhurji last night and will be having the left overs tonight.

It is spiced crumbled paneer with peas, really easy to prepare and delicious.

I only read this thread to find some inspiration, but now am feeling despondent!

I have NO idea what to make for dinner tonight

You all make such fancy nice tasting stuff.

Pixie B gave me hope .... Corn flakes ..... but I don`t think O/H would appreciate that ....... (He doesn`t drink milk so Cflakes would have to be served dry!)

A can of something? Nah ... only got Tuna .... Oh waitaminute ..... there`s left over basmati rice and lentils ........

Glad you enjoyed it, I had it for dinner last night and it was fantastic.

I love how creamy the dish was without having to use cream or cheese. (Am trying to lose a couple of kilos ).

I topped it off with toasted walnuts and garnished it with pickled red chillies. The pickled chillies cut right through the creaminess.

It's one of those recipes that is so simple, yet surprisingly delicious. Great combination of ingredients.

Next time round, I'm going to make a larger batch of the avocado purée and use it as a dip or sandwich spread.
