God, I love cheese rinds too..........even more than meaty balls and they are diiiivine!!!
Well, I just de-moulded a bunch today, then ground them and popped them in the freezer.

Think I'll use them in some cheesy sauce!

Re: Tonight's dinner?

I so regret readin this thread...I don't know what's making me gag more, rinds? As the garbage bit of cheese people pitch? Or moldy xmas cake, I think I'd go for that than the rinds.. Ay. Bunch of strange anglophones..

So, what we are having for dina is purely high class comfort food, home made thick brocolli/red pepper/parmazzan soup (well, it's kinda like rinds, innit ), nice moist lardons/coriander/carrot/curry cake and a salad. Weeeeeee...

Re: Tonight's dinner?

Tonight's dinner is from the old South. Federkohl cooks, smells, and tastes like turnip greens if cooked with some kochspeck, a small chili, a little sugar, and doused with a little vinegar. Cook long and slow or use a pressure cooker. This goes with some baked sweet potatoes seasoned with black pepper and butter. Add to those some pork chops in a skillet with a lid, and all you need is some corn bread to soak up the pot liquor.

Well, the calf's head is almost finished simmering!

And I've just sliced the smoked meat to make the reubens.

Re: Tonight's dinner?

Had to improvise again as visitors arrived and not been shopping since return from hols. Veal roast from freezer, some dried ceps picked in the autumn, a few carrots and onions left in the utility from before departure - and some red wine, crack of pepper, bit of harissa for good measure- done. With plain rice and green beans. Bon ap.

Re: Tonight's dinner?

Dinner tonight was a bowl of delicious home made spicy pumpkin soup followed by an equally tasty cheese, ham and onion toasted sandwich, mmm mm!!

There is even enough Weight Watchers points left over from today to sit down enjoy a coffee with some scrumptous Swiss chocolate.

Life is good!

Re: Tonight's dinner?

I have just made a huge pot of fish soup that my sister and I have devoured. It consisted of monkfish, mussels, clams and prawns in a broth made with shallots, garlic, fish stock, white wine, lots of parsley and a pinch of saffron.

Delicious! ... mopped up with crusty white bread
