Re: Tonight's dinner?

A somewhat Greek / North Africa inspired feast: pan fried chicken breast with rosemary and oregano, fresh cut tomato, lettuce, chopped cucumber, flavoured cous cous, tzatziki, and tomato hummus.

Tinga de pollo: shredded chicken in a chipotle & tomato sauce.

Smoky, spicy, tangy, delicious!

Re: Tonight's dinner?

First time I cooked quinoa this weekend.

Cooked in vegetable stock, mixed with a smidge of olive oil and chopped cucumber.

Saturday night was with pan fried chicken breast slices; Sunday night was with pan fried haloumi slices. Accompanied with chopped tomato, tzatziki and hummus.

Tarte flambée...

...cheater's version, using baguette for the base rather than pastry or pizza base.

Tom, I appreciate that that you appear to like things cooked exactly to a recipe but do you realise that a lot of famous dishes were 'invented' because someone got an existing recipe's ingredients wrong or messed up with the cooking.

Tarte tatin and bakewell are two that come to mind.

As long as something tastes good, does it matter if the exact ingredients are not used?

Perhaps it's the Italian influence in your household and although I'd agree that Italian food tastes great, there's not exactly much innovation in Italian cooking compared with Spain or the U.K. for example.
(I also appreciate that Italians like it like that).

I was writing generally about cooking and recipes. You do tend to jump down the throats on people who don't follow a recipe exactly.

That's more Italian than French.
