Seafood risotto (leftover squid and moscardini from Friday night in Soave), and some pizza we picked up yesterday in Campogalliano, eaten in Trieste, 100m from the sea.

My wife decided that she was too tired to go out, it would be easier if I cooked.

My own recipe, although I am sure its not original.

Fennel with Goats cheese linguine

Ingredients for two people
Olive oil x 1 tbsp.
Onion x 1 medium , halved and sliced
Garlic x 2 large cloves chopped
Fennel bulb x 1 large, quartered and sliced lengthways
White wine x 1 large glass or 3dl
Cream Goats Cheese 80 – 100gm or more as desired (Chevrie)
Single cream a tablespoon (optional)
Juice and zest of 1/2 a lemon
20gm Pine nuts toasted in a dry pan
Parsley, handful finely chopped
Salt and pepper
Linguine x 200gm
To serve salt and pepper and freshly grated parmesan


Cooking directions
Cook the linguine as on the packet
While the pasta is cooking, gently sauté the onion and garlic in the olive oil, when translucent add the sliced fennel; cook gently until starting to caramelise about 8 – 10 minutes on a medium heat stirring to make sure it doesn’t catch and the fennel is just tender. Throw in the lemon zest and stir.
Add the wine and bring to a fast simmer and reduce by about half, then stir in the goat’s cheese and cream if using, add some of the pasta cooking liquid to help emulsify into a sauce, add as needed if it seems to be to dry you want a thick creamy sauce.
Finish with the lemon juice, salt and pepper and the chopped parsley, then either add the pasta directly to the pan to keep warm or pour the sauce over the pasta and mix well. Top with the pine nuts and grated Parmesan.
Bon appetite
Variations
Use a blue cheese and walnuts, instead of goats cheese and pine nuts.
Use crispy pancetta instead of pine nuts.

Costolette alla milanese, though I use nodini (t-bone cut), with caprese salad and some bruschette with mantecato (bought at the fish place in Monfalcone) and leftover raw ancovies from last night (also purchased at Monfalcone, but prepared at home in Trieste).

Grilled sandwich. I know it might seem like a shabby dinner, but with local fresh wholewheat bread, local fresh butter, pesto, tomatoes, herbs and gruyere..it is a midweek heaven. And I got music to do tonight, so it's allowed to slack a little. Wonder what combos people like in their sanwich iron.

After much rich food and so on in the past week and a bit, very simple tonight: carrot, courgette and onion in the pot, add a bottle of sugo with basil, toss with whole wheat spaghettini.

One needs a sandwich iron / sandwich toaster / panini press first... that's one appliance I miss from back at home (where it is a lot more common for everyone and every office kitchen to have one).

Okay, after eating lean and mean all week, it is time to get serious. We are having 5-Spice pan-roasted duck breast with basmati rice and stir-fried green beans with onion, garlic, and soy sauce, paired with ... a red wine, on which I have yet to decide. Any suggestions? Normally, I would go for a pinor noir, but I haven't found one I like here.
