| | Recipes without eggs- please
Hi, my little grand-son is highly allergic to eggs (and most nuts).
I'd be really grateful for any dessert or cake recipes without eggs or nuts.
Especially a cake - he's never had a birthday cake. We've tried egg substitute powder, but it was really yuk. THANKS

Here is a cake you can try. It is surprisingly easy and tasty (if you like coconut). Emerson's 4-cup Wonder Cake
(from "the one armed cookbook")
1 cup Self Raising Flour
1 cup Desicated Coconut
1 cup Sugar
1 cup Milk
Vanilla Essence - Sift flour the add in all other ingredients.
- Mix until just combined.
- Pour into greased and lined cake tin.
- Bake for 30-40minutes at 180C.
- Allow cake to cool in tin before turning out onto cooling rack.

There are several websites that you might find useful: www.allrecipes.com (if you search recipes by ingredients, you can specify that you want a cake recipe without eggs or nuts). Several recipes from there have gotten great reviews, including the Crazy cake, the Eggless chocolate cake, and the Vegan chocolate cake. You can do the same on www.marmiton.org (in French).
The vegan baking cheat sheet from gluten-free goddess also gives tips on how to substitute for eggs in recipes. There are more tips and recipes on Papilles et Pupilles - allergies. Cake pops might be a fun alternative to 'regular' cake (I'm sure you can make it non-gluten free if you substitute regular flour for the gf flour & guar and xantham gums)

Thanks for all those sites, I am very grateful.
I did find many recipes, that they did not turn out so great. So what I'd be really happy to see here, is recipes people have tried and that turned out delish. Thanks all.

I have tried many recipes from www.egglesscooking.com and they actually come out great . The site is amazing. The ingredients however are sometimes very local to the US super markets since the lady who owns the site lives there in the US eg: Ener G brand's egg replacement powder. Earlier I used to be in the US so it was easy for me to find the ingredients, I just moved to CH a month ago , I will probably seek all of your help for German translation of the equivalent products.

Definitely do this cake!! It has been our standard birthday cake since our son had so many food allergies. It is really good and I've had so many people copy it because it is so good. We still make it even though he's outgrown his egg allergy. http://allrecipes.com//Recipe/crazy-cake/Detail.aspx
(As a side note, I always found the recipes better that weren't intended to be allergy-free. Just an informal observation)

Thanks will definitely try it. Little F's so allergic he has ended up in Casualty several times. It is such a worry - but we all try not to show it. Harder still now he has started school - so has to have a 'supervised' packed lunch. Very sad. When I was a child, I only knew of one asthmatic and NO allergies.

I would also suggest to not worry about him not liking the taste - my son has coeliac disease and has not had anything with wheat in it since he was 5. He is now 9 and he eats all sorts of gluten-free products that I would consider pretty 'yuck' but he is used to the taste...
The cook at school made him a 'cake' with gluten free wholemeal flour, shredded nuts, unsweetened chocolate...it was like a very hard bread roll with no sweetness at all...he loved it!...
On the other hand, I will cook him wonderfully tasty food, and go to all that trouble, and he won't eat it at all!

Just use milk, butter, white flour, sugar, golden syrup (or honey or whatever syrup you have) and baking powder. Then add whatever flavourings you like. It will dry out quickly, so if you're planning on not eating immediately, I'd ice all over to seal it.

I wish you and your family all the best. I don't want to offer false hope, but my son did grow out of several -- milk, wheat and eggs. The doctor said his nut allergy is likely to be life-long though.
Not sure if you ever make pancakes, but here's a great pancake recipe we make too (also still standard):
Mix these dry ingredients together
1 and 1/4 cups Flour
2 Tablespoons Sugar
2 teaspoons baking powder
1/2 teaspoons salt
Cinnamon to taste
Mix these wet ingredients and then add to the dry ingredients:
2 Tablespoons Oil
1/2 Cup Water
3/4 cup Soy or Regular Milk
1/2 teaspoon vanilla extract
Make as with regular pancakes. Get the griddle hot enough until drops of water 'skitter' across when dropped on the pan. Pour about 1/4 cup for each pancake and cook until bubbly. Then, flip to cook on the other side.

He might like to eat it with jam, clotted cream or whipped cream.
Or, make a white chocolate ganache (white choc gently melted in cream and whipped when cool) as a 'topping' for a special treat.

Easy peasy cheese cake:
1 can condensed milk
1 tub Philadelphia cream cheese
1/2 cup lemon juice
1 cup whipped cream
Mix the condensed milk, cream cheese and lemon juice together and the add the whipped cream.
Decorate it with different colored fruits cut into various shapes and make a design, eg a face

And of course.. Anzac cookies:
1 cup rolled oats
3/4 cup desiccated coconut
1 cup plain flour
1 cup sugar
125g (4oz) butter
2 tablespoons golden syrup (you can use melassse as a replacement)
1/2 teaspoon bicarbonate of soda
1 tablespoon water
Preheat oven to 150 degrees celsius
Mix oats, flour, sugar and coconut together.
Melt syrup and butter together.
Mix soda with boiling water and add to melted butter and syrup.
Add to dry ingredients.
Place 1 tablespoonfuls of mixture on greased tray (allow room for spreading).
Bake for 20 minutes.
Loosen while warm, cool on trays.
(makes about 35)

Try any regular banana cake recipe just without the eggs - add a bit of extra banana and it will still be moist and lovely. A bit more "bready" than "cakey" but still yum.
Same with carrot cake - leaving out the eggs doesn't make that much difference - did you say dairy free also.... I can't remember.... anyway, a bit of milk (or soy milk if allergic to dairy) instead of the eggs will be fine.

Most ice cream is made with an egg custard so he probably can't eat it normally.
Make egg free ice cream by throwing deep frozen fruit (mixed berries or banana work well) along with caster sugar and double cream into a blender. Serve immediately or return to the freezer. Heat chocolate, a pinch of salt and a little butter over hot water for a streaky sauce to put over the ice cream. Kids love this.
Edit: mmm....use the sponge cake recipe, layer with the ice cream between as a sandwich, back in the freezer and then cut into squares, cover with melted chocolate and freeze again.
