Where can a buy Cow Tongue in Basel?

Where can i buy a preferably cooked and cleaned cows tongue?



It is a long time ago since i had some, its easy enough to prepare but takes 3 hours to clean.

Looking for a pre cooked and cleaned one.. so far no luck with the local butcher shops..

Any tips, let me know.. thanks

Can't speak for Basel, but only yesterday I saw one in my local Migros. It was vac-packed, with the other raw meat products, so probably wasn't cooked.

Bought a cooked one once (fix-fertig) from Coop - Naturafarm in vac-packed blue/white (non transpaent) packing - similar to their ready-to-serve hams.

Thanks, the local butcher here said they would have it in Basel but not all of them do it as its seen as " waste " and not meat.

However..when prepared and cleaned good , it is so finger licking tasty

Thanks for heads up, ill check the local Coop/Migros on monday,see what they have.

I'm not an expert in tongue, as it's not something we eat a lot of here at Casa Idiot, but they regularly have tongue in the meat section of most of the supermarkets in France. I teased my wife (and did my best cow impression) about it today, as there's a whole chiller case of tongue on special offer at Leclerc this week. As you can imagine, I'm great fun to have on a Saturday shopping trip. It's a laugh a minute.

Obviously not cooked, and I'm not sure what constitutes a 'cleaned' tongue. I mean, look, it's pretty certain that the cow didn't brush her teeth (no opposable thumbs, you understand). But I don't know whether you need to 'deskin' a tongue before cooking it or not.

In any case, they're packaged and sold like this -- not sure if this meets your needs or not.

What now?





The tongue itself has stuff (toxins) in it you don't want to eat.. living in front of a farm for the best part of my life, i have seen many cows licking each others private parts..not something you want to think of while eating it btw

So therefore you need to boil it for 3 hours, skim the foam of it and refresh the water every hour.

And indeed, the tongue needs to be stripped from its skin and the crop ( in the back) - so all whats left is that soft piece of meat.

Too much work for me, I'm afraid. 'Tongue' now officially goes in the 'only order when someone else does all the hard prep work' category.

(I admit it -- I use pre-prepared stock in my kitchen, too. I'm lazy.)

That particular cow can lick its own nostrils too - interesting. Your pic of the tongue casserole with vegetables look delicious. I have never heard of it being eaten like that ... however, I do adore pressed cold tongue, as eaten in salads, sandwiches, etc

None the less we like cows and they like us.. once and a while you have one or two who come over as soon as they see someone in the street, just to say hi





Dad had a fanclub of cows at some stage, when driving in the street they would be following him allong the side

I'm sure I saw it at Manor (claraplatz) in the cooler unit at the back (by the fish). Again, it was probably raw - I didn't look very close. I did eat it once................ once

Definitely seen it in either Migros or Coop in Basel (Brausebad,) or the SBB Migros.

My mother used to cook it in a Pressure cooker , before pressing it for eating it cold with salads. Personally, I put it in the same category as beady-eyed little whitebait, tripe, oxtail soup and (in later years) chicken feet.
