Where to buy or how to make Raspberry Extract

The title says it all. Any ideas? I plan on making a cake with this in it. Thanks

Re: Where to buy or how to make Raspberry Extract

I think it's just fake (or real) raspberry flavouring ?

Does your recipe already have raspberries in it ? The extract might just be as a flavour inhancer, and for extra colour...

If it was muffins or cupcakes I bet you could put a spoonful of raspberry jam in instead to give colour and/or flavour...and extra sweetness....

Same with icecream or yoghurt....

It is a white chocolate raspberry cake. It is used in the cake batter and the frosting. No actual raspberries in the cake.

So it's essentially a white chocolate cake, but with rasperry flavour for a little 'zing'...

I wonder if the specialist liquor shops stock raspberry liquor - or I'd try Globus food and wine section...

Or could you use raspberry syrup? Available from Migros or Coop.

Actually the one from Volg (homebrand) is better, less sugar than weight watchers and tastes "more" rasberry, we often add a splash to plain yogurt for the kids, they love it.

Go to the liquor store and ask for framboise.

As much as I LOVE framboise, it's not the same.

Raspberry extract has a much stronger flavor.

Raspberry syrup also won't work in your recipe, for the same reason.

I think so! I've never seen it here and I don't think framboise would do the trick, it doesn't even really taste of raspberries - it's just strong!

It does if you buy a good one, preferably made in Alsace, though I know a guy in Malvaglia (TI) who also makes a good one.

Re: Where to buy or how to make Raspberry Extract

Your best bet would be to make some. Just get a pack or 2 of raspberry's from coop or migros and blend them. Pass through a sieve then cook the liquid in a 'double boiler' to evaporate the water out of it, then it will become a jam like consistency. A bit of a hassle but buying it here would probably be more difficult.

Re: Where to buy or how to make Raspberry Extract

One of my friends in the US uses an online shop called Get Suckered to get the supplies she needs for candy making. I believe they do have raspberry flavoring but it is OIL rather than the alcohol based extract that is more typical for baking, I'm unsure what difference it makes (if any).

They do offer international shipping, even to Canada they say to anticipate three weeks for delivery though, I'm unsure what your timing requirements may be.

Otherwise, I *have* seen a larger variety of flavors available just before Christmas (that's when I usually "stock up" on orange flavoring) in some of the stores here, not so helpful at the moment but I mention it more as way of assuring you that there ARE more flavors that get some use than "butter vanilla" and "bitter almond". It may take some searching though, maybe at specialty baking stores.

Good luck with your search!

Contact EF member crumbs. She has a great on-line store for all cake making stuff. If she doesn't stock it I'm sure she could point you in the right direction.
