And yea, I'm stunned to hear cheddar has been around in COOP/Migros for a while, I really never saw it. I haven't been hunting it madly, but do look every now and then. I guess it's only certain COOP/Migros.
Cathedral City is a "block" cheddar, ie, made in big blocks and vacuum packed and matured for 1 to 6 months usually, although some do mature for longer. There is rarely any chemicals added to them but being wrapped in plastic they cannot mature properly (real cheddar is made with raw milk in 24Kg drums, wrapped in cloth smeared in lard to keep them almost air tight and matured for 12 to 18 months). Unfortunately 99. something percent of "cheddar" is made the plastic wrapped way which is why it has such a bad reputation in Europe.

The block cheddar can get extra flavour by the use of enzymes added to the milk prior to cheese production, as they are not part of the cheese making process they don't need to be listed as an artificial ingredient. The most common enzyme added to milk for cheese production is called Helvetica, it adds a sweetness to the milk that you only get naturally from good grazing. The very cheap poor quality milk that industrial cheese makers use does not have this natural "extra" flavour. I am in no way claiming that Cathedral City uses these enzymes for extra flavour though. If they do they would of course keep it a secret, just that many industrial cheese makers do

esto, I am in Bern next Saturday at St Ursulas church on Thunstrasse, if you're in the area pop in and I'll show you what real cheddar cheese is like. Seriously, you don't have to buy any, my free samples are my advertising budget, I know most people do prefer the industrial versions, but I do like to try to show people what they might be missing.

I always have a block of cathedral city in the fridge for cooking, cheese on toast etc... I actually like it I just like GGs stuff more

I get my English Cheese at Markthalle im Viadukt, 231 Limmatstrasse, 8005 Zürich, Switzerland. They have a great selection of cheeses, pies, pickles etc. check them out on http://www.facebook.com/BritishCheeseCentre

They have the black packet extra mature cheddar at Coop in Maladière and slightly milder in a white packet in Migros at Marin. They also have blue stilton on the deli counter in Migros (but I suspect my OH buys most of that)

I might just have to pop up to Bern next Saturday. It's probably the nearest you're likely to get to Neuchâtel in the near future.

Hey, actually, I had the very same experience today - just after whining yesterday I was missing Cheddar so badly, went to a big CO-OP today and saw a cathedral city!! I was over the moon! Opened it as soon as I was home, enjoyed on a cracker!

It was the first time I've seen it, I don't go there often but I do always look for it. Anyway, I'll still visit the cheese centre in Zurich one day, but until then, can still enjoy some cheddar!

Yes here in Vevey they stock Cathedral City Mature Cheddar pre-packed)and a mild cheddar ( at the cheese counter)

well, lausanne is a bit closer and they have the catherdral kind in coop caroline but if you go to manor in the center they have a much better version- though no where near the yummy bio cheddar we had with gg in zurich- that stuff just melts on your tongue!
