They are grated turnips - fermented in a style like sauerkraut.
You can buy packs of them in Migros or Coop and prepare them like sauerkraut - adding wine, spices (juniper and caraway) Very healthy and good for the blood!! 
Serve with sausages, bacon, boiled potatoes etc.

Two Swiss ladies told me about this dish in glowing terms. I did look it up on Google, and there are several articles on it. In the past, this forum has often been better than Google, so I asked the question. Naturally, a Swiss answered it for me. Anyone who thinks that is being a nuisance must be akin to that of the south end of a north bound horse.
