If you're picking the grapes yourself, pick a couple bunches that are still green and throw those in: they have enough pectin to keep you going.

If not, I'd use pectin. I prefer the no-sugar-needed kind, find it less finicky to deal with. (I then add sugar anyway, just not as much as you'd have to for the full-sugar variety.)

There should be directions inside the packet - different brands vary, so trust the packet. Stiff leathery jelly can happen if you have too much pectin (e.g. the 'right amount' of pectin but underripe fruit) but can also be due to overcooking.

I was going to say, 7 francs??? But then, if you count the expenses for jars and fruit and whatever else, I wonder if it amounts at least the same cash..

In this case, probably not so dissimilar, at least for me. On the other hand, some folks preserve fruits and veg often enough that they have many of the things on hand already as a staple for their kitchen, including jars which they recycle themselves.

For some other things, such as the jams and jellies that my mother-in-law makes, she makes them with the fruits of her own labor. I'm really looking forward to birthday and Christmas when she gifts us some home made raspberry, blackberry and red currant jams.

I also found concord grapes last year (and this year too) in Coop. I was stopped dead in my tracks when the smell found its way to my olfactory system. I immediately bought 2 kilos.

As soon as I arrived home I had my pot and jars out, and made enough jam to satisfy my grape jelly cravings for a year... until my husband got his hands on it the next day and ate an entire jar! In a week all my jam was gone... So I went back and repeated the process

I made my first batch of jelly about 2 weeks ago and it's pretty much gone... I guess I'll just have to do another batch before the grapes disappear.

As far as adding pectin... I add it only to the fruits that need it, and grape jam happens to need it. With grapes though, even if you use 1 kilo of fruit, it doesn't necessarily guarantee that you have enough liquid for an entire packet of pectin.
