Hello
I've searched on the forum and in Coop but can't seem to find Demerara or dark brown sugar?
Any ideas?
I am making homemade cookie mixture layers in jars for Xmas hampers. It needs to be dark brown to give a better layering effect.

Maybe the brown sugar thread should be made a sticky.
If all else fails Britshop will have some (but their T&L Demerara wasn't very sticky - more like roh zucker or even golden granulated).

My little village shop sells it- it comes from Belgium and is excellent. Maybe I should start a business re-selling it to people on t'Forum. +20% and postage, lol. Or Grumpy could hide some under his cheese counter, lol.

I saw some yesterday in the Indian grocery store in Vevey (while I was on my quest for evaporated milk for a Thanksgiving recipe). Strangely, they carry both light and dark brown sugar. If you want exact location, PM me.

Someone else posted this recently, can't remember the thread, so I'll link it again: How to make Brown Sugar.
1 cup granulated cane sugar
1 Tablespoon unsulfured molasses
In a medium sized bowl, mix together the sugar and molasses. It’s that easy. There’s a part in this process where the molasses is super gunky and clumpy. You’ll think to yourself: Joy, you were wrong… this is coming out all wrong. Don’t worry. keep mixing it all together. It will even itself out. Work it until completely incorporated and no big molasses globs remain. For dark brown sugar, add another tablespoon of molasses. Use as you would in your favorite cake and cookie recipes. Store in an airtight container or in a ziplock bag with the air pressed out. Dang that’s easy! (Of course, the next question then becomes where to find molasses - I'm not so familiar with this, I did get some "brotaufstrich mit melasse" from Migros which is only 20% "melasse". Roh Zucker seems to be the only thing around :-(
Can't believe I may ave to consider ordering sugar online when you can get it so easily in Tesco UK.
Anything else I need to order online that's not available here but common a muck in the UK ?

Sometimes I feel like I'm the only one who chokes on the prices for those British / American specialty online shops.
I found a box of soft mascobado sugar (seems fine granules, almost but not quite powdered) from a local reformhaus type place, the description is "bio vollrohrzucker" (bio full raw sugar) - the smell and flavor is the same as what I'm used to but it's not sticky.
I've used it for cookies and it worked well, I probably would add a little moisture somehow (maybe butter or a dollop of honey) if I were making something for which texture was an issue.
