Caul Fat.

It's the membrane of pigs/cows internal organs that is used for making sausages or other traditional meat specialities such as faggots etc.

I haven't used it for years, but used to do great homemade sausages for the BBQ with it in London, where I could easily get it from a traditional butchers nearby.

Google's a bit stumped, so has anyone here got any idea about:
- if it exists in CH?
- what it's called here?
- where I could find some?

Re: Caul Fat.

Caul fat is called crêpinette or graisse de crêpine in french, glückshaube fett in german.
I've very occasionally found it in the fresh meat cabinet in my local Migros, or you could try asking your butcher.
