Elderberry - Recipes needed

I have found some Elderberry berries in the garden, I need some recipe recommendations!

Jam or wine are all I can think of ..... but whatever you do, you're going to need a hell of a lot.

I personally prefer the flower - but too late for that, now.

I remember my father stopping on country lanes and getting everyone out for hours to pick elderflower from the hedgerow, so he could make a few bottles of plonk ..... but after a few weeks I did get my reward - not bad for a 12yr.old

My Mother would make the Elderberries go further by stewing them together with apples, a nice Autumny type dessert, kids particularly like it as it can make your tongue go purple, clothes as well, so be warned.
If I remember correctly, she often served it with lemon sago and homemade vanilla ice-cream.
Not everyone likes it because of the pips, but I always enjoyed the "texture".

They also freeze well once they have been taken off the stem.

This recipe looks really nice as well. Apple and Elderberry chutney.

With a reminder that parts of the plant are poisonous and it's best not to eat the berries raw, although I did and suffered no ill effects, still, some people may be sensitve to the sambunigrin acid, which cooking renders away.
