Cake makers to the rescue: Help with mixer attachment needed

Hi EFers,


Can one make cheesecake batter using these


or are these


absolutely necessary to create a NY style cheesecake batter?

Doing it by hand definitely won't yield the results needed since ingredients have to be incorporated very quickly so as to avoid air bubbles and a fluffy cake.

I would use the bottom one but I am no expert. I never use the top ones as they are for dough.

The top ones are dough hooks used for making bread etc. I would use the bottom ones which are the general whisking tools.

The bottom ones. However, some recipes actually suggest using a hand whisk becuase the whisking rate is lower, so less air bubbles are added. When using an electric beater such as the one you have, keep the mixing speed slow and do not over mix.

Also, have the ingredients all at room temperature before beginning. Apparently this lessons the risk of the surface pulling apart and cracking when baking.

Agree with Biff, neither. You can whisk eggs with a machine, but when mixing in the cheese, best done by hand in my experience
