Looking for big roasting potatoes (Zurich)

I've had a special request to cook big jacket potatoes for Christmas lunch.

I tried today in a greengrocer as well as the local supermarket, and I was fairly confused and not really confident of the options...

I've done a little research - seems I need 'floury' potatoes - with the blue not the green bag, (Rösti not Salat)...

But I haven't actually seen any that were large and round with thick skins...

If anyone spots and really good 'roasting' 'jacket' type potatoes around Zurich, please let me know!

Re: Looking for big roasting potatoes (Zurich)

Sometimes Coop sell special baking potatoes (although you said roasting in the title and baking in the thread, so not really clear) but its quite rare and even then, they aren't that big.

Probably best to go to a farmers market or a farmer directly if there are any nearby - its not really a Swiss specification potato you are after

Coop do "Baked potatoes" in an orange bag. This is what we use for jacket potatoes.

In Italy, you can get huge ones.

Heading to the cousins tomorrow, could pick some up, but can't post until monday, which means too late.

Meanwhile, just try and fine some large Binje somewhere, they work perfectly.

Re: Looking for big roasting potatoes (Zurich)

Thanks. Sounds like the bigger coop at Sihlcity might be a good stop, and if not then I'll probably go to the Barakat at Schmiede Wiedikon or the EGE Turkish grocery in Josefstrasse... I love shopping adventures

I saw some Bintje today that were larger than usual, but all irregularly shaped and not really quite big enough for what I have in mind...

Find some place that sells them loose.

Re: Looking for big roasting potatoes (Zurich)

There is a small Migros near my house and, just the other day, I noticed that they have started to sell big, baked potatoes (in a bag).

Before, I could only find them at the huge Coop stores.

They have bags of baking or jacket potatoes in the Migros at Zugerland.

Re: Looking for big roasting potatoes (Zurich)

The size of a potato is very much dependent on the growing conditions while they are underground. Last year (2011) the conditions were quite wet with a good period of heat resulting in ridiculously large potatoes. This year (2012) - not so much as the potatoes are a bit smaller than normal.

You can find good roasting potatoes at the markets (Oerlikon on Saturday for example). You will need to find mehlig potatoes for roasting. Your best bets this year are Agria or Fontane. Rösti potatoes will work for roasting, but are not the best for a fluffy interior.

If you want a thick-skin exterior than consider coating the potatoes with olive oil before roasting. The fat creates a nice crispy skin and prevents the interior from cooking too fast...

Re: Looking for big roasting potatoes (Zurich)

For roasting potatoes I use waxy potatoes. Peel and parboil them in a pressure cooker for no more than 4 mins. While the potatoes are pressure cooking, I have a heavy roasting tin with olive oil in the oven at highest temperature. I put the pressure cooked potatoes into the hot fat, baste them well and roast in the hot oven for around 40 mins, remembering to turn them a few times during the roasting. They should come out crispy on the outside and very soft in the middle.

Cheers,
Nick

Reviving this thread.

I checked Coop and Migros but all the potatoes are too small- tennis ball-sized. I am looking for really large baking ones - about the size of two fists - like you can buy in the UK.

Does anyone have any leads, preferably in the Basel/Dreiländereck area?

Have searched for them since years here without luck - regardless of price.
Bought in the Migros last month a 'Baked Potato' pack, with a couple of larger ones in it (nothing impressive).

Re: Looking for big roasting potatoes (Zurich)

Hiebers (in Germany) always has these in stock. If not fresh potatoes, then always the prepackaged Block House variety (including sour cream with chives for on top). The Block House ones are sold in the fresh meat cabinet, next to the Block House steaks. (go figure!)

Lidl does massive bags of potatoes - some of which are pretty big, but probably not as big as the ones you want.

Unfortunately they only seem to sell these massive bags in winter.

The potatoes taste great too.

I've had two separate incidences when Swiss locals round for dinner have remarked on how tasty the potatoes are and where did I get them.
I didn't dare tell them I got them from Lidl in case they chastised me for daring to serve them food from such a lowly emporium.

I got some largish ones from Denner - but I have to say that the biggest ones I've found lately were in France. Which doesn't help you at all, I suspect. The smaller ones do taste great if you bake the hell out of them and coat the baking skins in butter.... yum.

Probably a bit less than two fists (unless you're female), but a decent size nonetheless. Ridiculously overpriced though.
