Fried spring rolls recipe?

I'm looking for tips and tricks to have the perfect fried spring roll. I plan to use rice paper, chicken and crab meat. I usually fail when it comes to the frying part.

- What are the ingredients you use or recommend?
- tips and tricks for frying spring rolls (type of oil, temperature, wok or pan etc....)
- recipe for the accompanying sauce (spicy preferred)

I've done it with ricepaper using Vietnamese recipes (my wife's ex was Vietnamese), with pork and/or shrimp.

I'll have to dig up the book and get back to you.

There's a sauce in it we like too.

I use peanut oil in a pan or friteuse.

i found this recipe once and it looked soooo easy it stuck in my head to try it, not having found egg roll wrappers easily in ch i havnt yet, very few ingredients (some recipes have 20 ingredients!) and quick

super easy egg rolls!

You can now get thin pastry from most big Coop stores, sold in small flat boxes, in the pastry fridge. It might be worth trying.

They also have a shop at Bahnhof Oerlikon. You can also find wrappers and all ingredients as well as Asiaway 10 Schaffhauserstrasse, which also hosts one of my favourite restaurants!

Just a general tip on Asian recipes: I've found the best source to be YouTube, of all places. Asian cookbooks seem to always want to put their own fusion spin on a recipe (or the recipes simply don't work), whereas I want an authentic recipe that does work.

For Korean, I follow the youtube user maangchi.
For Japanese, cookingwithdog.

And I've found some good Thai and Vietnamese but stupidly didn't subscribe.

I think there are two primary problems people run into when making spring rolls - soggy filling and oil temperature. This link has the basics covered rather nicely, I think. Have fun!

I usually prepare it using the sheets that you get in Coop or Migros in the instant gipfeli section.I believe this is what is being said as pastry sheet.I use this for the outer cover.It cones out better when the filling is really dry and not watery.
