Any Sauerkraut/Choucroute recipes ?
 
I like Sauerkraut, and would like some recipes, especially as an oven dish. Thanks !

Are you after recipes for how to make the sauerkraut itself (in which case my advice is: buy it pre-prepared like everyone else, as any improvement in flavor is outweight by the sheer amount of work to make it yourself). Or are you looking for suggestions of dishes featuring sauerkraut, like the traditional Alsacian choucroute garnie?

Sorry, I mean dishes featuring Sauerkraut. I buy my Sauerkraut prepared.

Get yourself a cabbage, a jar, some unrefined salt and make it yourself!

There are lots of recipes for pork loin or bone-in pork chops and sauerkraut. The best ones include chopped apple and onion. I usually add more caraway seeds than the recipes call for.

I use a heavy cast iron casserole dish. I start off with browning the pork on top of the stove, then remove it and set it aside. Then I saute Speck and chopped onions and the caraway seeds. I add the sauerkraut and then put the pork back in. I add some broth and some pepper corns and put the pan into a medium oven, covered. Takes a couple of hours, depending on the cut of the meat.

If I want to make it extra special I make mashed potatoes and when the dish is ready, spread it over the top and pop it back into the oven to brown. Delish!

For me the go-to site for more or less local recipes is chefkoch.de.

An extra simple example:
500g Spätzli (Chnöpfli in swiss German)
3-400g Sauerkraut (white, sweet)
100-150g dairy butter

Prepare Sauerkraut and Spätzli as prescribed on its respective package, let any liquid drip off the Sauerkraut (if applicable) and heat it in the microwave if necessary. Melt the butter in a pan, high-ish heat so it turns a nice golden (perhaps a bit brown) color (too much heat if it "smokes") and pour over the Sauerkraut/Spätzli mixture. Done, serve.

I love bread to go along with this. You can add roasted onion/ham and a lot of other stuff, but I prefer this very basic make.
