Cold Pressed Juice and Kombucha- Zurich

I see that there are a few cold-pressed juice cafes in Zurich now, and that a few deliver throughout the country. Does anyone have opinions or recommendations on the fresh juice scene in Zurich? Also looking for a good kombucha or kombucha scoby to brew my own. Thoughts?

I just moved here a couple days ago and was wondering where I might be able to find a scoby...priorities! If you find a source, I'd love to snag one too. Viva kombucha!

Scoby is an acronym for a "symbiotic colony of bacteria and yeast." It's what's used to brew kombucha tea...it sounds gross, but it's magic:

It is an acquired taste for sure. Kombucha is essentially fermented tea. The live cultures that ferment it being from the scoby. Any fruit or flavored tea combinations added just take the edge off, but it will always taste a bit like soda thats gone off. The benefits on the gut and digestion make it worth it, and some are definitely better than others. I find the one at Migro (Carpe Diem, I think? Something like that...) to be too fruity and not fermented or fizzy enough to be considered true kombucha. But I am sure it still has some good bacteria in it too. Worth a try!

And I wonder if one might find the kombucha in one of the Asian stores in the area. There is a Japanese store on Schafhauserstr, near the Irchel. I forget the name.

You might also contact Jack at laughinglemon.ch - he knows where all sorts of things can be sourced, and is a good guy to know for food stuff.

Exactly! I just need that raw, un-flavored, good quality kombucha "mother" (or scoby) to start my own at home. I may have to wait until my next trip back to CA to bring one back.

I will look into he Japanese store. Thank you!

I usually order mine with Glow..it's based in Gstaad but delivers nationwide. It arrives with the Swiss post courier early in the morning the day after. So far no complaints.

What is cold pressed juice? I've heard of cold pressed olive oil, where the method of oil extraction is not using heat, but never for juice?

I think it's using the same cold techniques...not sure- it's like juice without any fibre or additives. But it certainly makes me drink fruits and veggies that i would never in my right mind even want to buy or eat! I do it once a month for 1 day...I can't bring myself to do the 3 day cleanse but at least I know I'm getting my monthly supply of fruits n veggies!

Carpe Diem and most other commercially available Kombuchas have been pasteurized, so they're effectively simply soda.

I have a growing SCOBY factory on the go, but they're all in the process of growing. If you don't find one, I'll happily let you know when I have one to part with.

I'm also very busy with various 'Bugs' - I have a ginger bug, lemon grass, galangal, turmeric and krachay. All bubbling away like crazy :-)

I use these to make a second ferment flavoured Kombucha, naturally fermented ginger beer and I'm working on making my own naturally fermented tonic for Gin & tonic.

You can find them on tutti.ch, Ricardo and other online shops.

You can also start your own SCOBY:

Find some Kombucha (unpasteurized)
Make some sweetened black or green tea
Add the Kombucha to the tea once cooled
Cover with cheese cloth or coffee filter
leave undisturbed for 2-3 weeks
A SCOBY will form
Transfer SCOBY and 1/2 cup of original tea to a new batch of sweetened tea
Leave it for 1-2 weeks and you have Kombucha.

A glass of kombucha added to sweet green tea. This is after 3 days

After one week, the forming SCOBY was transferred to new sweetened tea. This is being left for 2 weeks to brew my Kombucha
