Re: Where to buy baking soda?

It's called Natron and it's in the baking section next to the baking powder. It's packed in small envelopes. My advice is to buy a box of it next time you're abroad.

Another German name is Backpulver.

Backpulver is baking powder, which is not the same thing.

Re: Where to buy baking soda?

I have found larger quantities of baking soda (bag not a box) in well-stocked ethnic groceries

Muller doesn't beat that then.

Had no idea they stock up on that too, I usually buy other stuff from them.

Not familiar enough to know if there is a particular dish in which baking soda is used - it does make a rather handy cleaning and deodorising substance

Got that - meant in Turkish/eastern cuisine. Standard baking ingredient where I originated, used also as shoe/fridge deoderiser

Interesting video on the differences between baking soda and baking powder as well as which does what.

I was curious after misreading your post so I did a bit of googling.

It's used a lot in Turkish kebab recipes like kofta with minced meat, as a meat tenderizer.
I've never used it when making kofta.

It seems it's been omitted from the U.K. versions of these recipes so I can only assume that it may be the case that a tough old piece of mutton minced is possibly used in Turkey at times rather than minced lamb.

Pancakes, soda bread, crackle candy, Fondue (a knife point just before serving makes it a bit lighter), sherbet.
