Hirsch cooking question

hi folks,

come to end of Wild season, and I have a question for any experts (have searched, but not spotted this being covered before). I did a venison fillet carpaccio a couple of weeks ago which was great. However, with the season finishing i havent been able to find anyway, but have got my hands on venison entrecote. Looks the same, but my head spins when trying to get my head around different cuts of meat, and added translation/country differences.

anyone any ideas on whether this would be suitable for carpaccio?

Many thanks in advance!
