Great Swiss Cuisine!

Since some people seem to have a bit of difficulty in finding great Swiss food, here is thread to point them on the road to food heaven.

So, other than the best fondues in the world, we have:

Capuns
Polenta (not to be confused with the crappy Italian versions)
Pizzoccheri (better than the Valtelinese version, which used to be Swiss in any case)
Cheeses too numerous to enumerate
Breads, also too numerous to enumerate
Bündner Nusstorte
Mortadella di fegato cruda
Salamella cruda
Büsèca
Cazzoeula
Horse (steak, salsicce, tartare)
Züri Gschnätzlets
Leberli (veal or pork)
Spinach pie

the list is endless!

Rubbish. A few of them maybe, but in most cases the dish you would order would have another name, e.g. you wouldn't simply see 'Kalbsleber' on the menu, but generally something more like 'Kalbsleber Geschnetzeltes Züricher Art'. And a steak, of whatever animal or cut, only becomes a dish once it's been prepared - until then it is indeed just an ingredient.

Capuns (speciality from Graubünden/Grisons) is great! One of my favorite! And very easy to prepare

Polenta is also very popular in the south & GR. A lot of italian infuence there Tom

Nope, around here liver and horse steak are on the menu simply as such.

Maybe you should rename the thread 'Great Ticinese Cuisine' ?

Most of the stuff on that list wouldn't be found on a restaurant menu in these parts (not under those names anyway).

Maybe if he'd put a bit more effort in and actually written about the dishes and what they consist of rather than just a list of stuff that is probably incomprehensible to most of us he might have hot a better response.

One of my kids has finished his first term of Swiss cooking. I guessed they might do about five dishes (including the curry with apple and cherries).

I was right.

Now it's variations on a theme each week.

Beef in a bland cream sauce.
Veal in a bland cream sauce.
Pork in a bland cream sauce.

I guess it's chicken in a bland cream sauce next term.

That's what you get for living on the wrong side of the Alps.

Personally, I prefer my veal in tuna sauce, and my pork raw, rare, or slow roasted for 4-6 hours in a smoky environment (LOVE smoke).
