Guys,
I am in geneva from quite some time and is buying frozen Amul paneer to satify my appetite for Indian panner. It doesnt tastes as good as fresh paneer. Any idea if i can get fresh desi paneer in Geneva. May be here Indian Paneer is available by different name!!

Amit | | | | | its called 'Serac' (in French ) / Ziegerkaesse (in German), is in big Migros n Coop, can also be found in Fromageries (special exclusive cheese shops.

Ziegerkaesse (in German)
HI!,
Just a quick question, did you find Ziegerkaesse as hard as Paneer. I mean can you make cubes out of it???? I have been buying it from Spar and the local market so far and it is like a cottage cheese or chunky yogurt, making it very difficult to make cubes for Palak Panner. I was just wondering if you were doing any thing that I should be doing too.
Any help is appreciated.

Wow Amit lucky you! Are you gettting Amul cheese as well there? I better visit Geneva for grocery then.
I have been craving Indian biscuits lately. Any body seen Britannia's Bourbon Treat or Krackjack, or Monaco etc in any Indian Grocery stores? In Zurich, I havent found any yet. may be I havent visited the shop that has them. Please let me know if any of you know about it. I appreciate the time and help.

I would also suggest you to make your own Paneer from Migros Whole Milk. We make it at home and its very good.
Its far easier than searching here and there.

Ziegenkäse is German for goat cheese.
Zigerkäse is a rather aromatic cheese specialty with herbs from canton Glarus.

In the French side its called Serac. Its made also from milk. This data would be confirmed by any cheese maker/Fromageri.

May be i would try with whole milk..this time..

Hi,
I have given up making paneer at home due to lack of time, I use amul paneer now. although it had completely disappeared from the Indian shops last month or so, it was back last week. I have now got 6  packs safely in my freezer.Anyway here is the recipe for lovely paneer at home.
Boil whole milk ( the co op one is fine)
As soon as the milk starts to rise add a few spoons of white vinegar and take it off the gas.
Let it cool for 5-10 mins. stir it occassionally not vigorously till you see the water separating from the curdled milk.
Drain it in a muslin ( thin cloth and hang it to drain excess water while still hot.
Let it drain for 5-10 mins.
take it down and press with the cloth on a flat surface using another flat thing like a chopping board ( this is to drain excess water but dont be over enthusaiastic as it may become too dry  .
Weigh it down with some heavy thing like a pan full of water or so for about 20 mins.
Voila paneer is ready  . cut it into cubes marinate or store in freezer for further use.
By the way I treid using Serak, looks and feels good but doesn't taste the same. My husband immediately new the difference although I didnt tell him | This user would like to thank neerajana for this useful post: | |

Yep, sérac is different stuff. It is a whey cheese, made from what's left over after all the casein and fat, used to make normal cheese, have been removed. Being a vegetarian with all those great indian dishes to enjoy is really no loss (paneer and pea curry, mmm).
