any other cauliflower rice fans? there is frozen cauliflower rice now in migros, here is how i use it for a quick vegetarian meal -
cauliflower rice - put some frozen cauliflower rice in a large frying pan and start to heat https://produkte.migros.ch/you-blumenkohl-wie-reis
add stuff e.g. yesterday i added - chick peas, chopped canned artichokes, chopped fresh parsley
some spoons of coconut milk (i only use the solid white part, not the water) https://www.coopathome.ch/en/superma...milk/p/4281039

plus other spices e.g turmeric, garlic
put a lid on the pan and let it heat through. you can make this within about 6-7 mins, and out comes a substantial and tasty meal !

Yeah we have it a lot with curries. I smash my own though. Can't bring myself to buy it ready done (although I'll buy other pre-prepared veg).

Then I checked prices and (at least today at leshop, as Migros site only indicates "Tagespreis") it's even cheaper than a bio-cauliflower. Which I find surprising. Suspicious, considering all the processing, packing etc.? Ah well, let's say surprising. |

I use it quite a lot. Usually simply roast it a couple of minutes in the oven. Been doing my own using my Thermomix which takes a couple of seconds. Will check out the Migros stuff though.

Seems like a good way to reduce waste.
I eat cauliflower rice quite a lot but always make my own. TBH I prefer the taste and consistency of conventional rice but the cauliflower version is great for anyone on a low carb regime. I use it instead of rice and pasta and it does the job well. You definitely need a food processor to quickly break it down, A single head does me for about 6-10 meals depending on how I use it so quite economical too.

I don't really see how it replaces rice but I don't eat much rice but I love cauliflower and always found there was a limited amount of preparation ideas for it (well, I was limited in ideas  ) so I can see the appeal.

But if you whizz it up enough in your food processor it really does look like rice and can fulfil the same purpose though naturally it doesn't taste the same. But once it's mixed through a curry or other sauce it's a surprisingly good substitute. Yes, I freeze it. One head makes a big bowl which I then divide up into portions. I freeze all but one or two which I keep in the fridge to use within a few days. Monsters?  | | | | |  Half a cauli each sounds like a lot, yes, unless a very small one -- but each to their own.
Something I forgot to mention -- after I've whizzed up the cauliflower I tend to saute it with onions and whatever I have lying round -- perhaps grated carrot, finely chopped red pepper, peas, chickpeas etc. This bulks it out and adds to the flavour. Then I'll freeze it in portions. Maybe this makes the 6-10 portions more comprehensible.

I think a cauliflower rice salad would be pretty nice too.
Actually all it is is chopped cauliflower - wonder how long until they sell carrot-rice? 
Still, never thought of chopping cauliflower, so still a new idea to me. |

Still, never thought of chopping cauliflower, so still a new idea to me.  | | | | | It’s part of a group of vegetables that have become stand-ins for starchy foods like rice, pasta, potatoes and bread — all of which are verboten if you follow a low-carb diet. So we have cauliflower used as rice, or mashed instead of potatoes, or baked as a pizza base; 'spaghetti' made from courgettes or even cabbage, thinly cut aubergine as 'lasagne', and so on. Google 'carb substitutes' and you’ll get loads of possibilities. Most are surprisingly good.

not so sure about broccoli rice - cauliflower rice has a perfect texture and lightness also color to act as the base for a meal such as curry. just like rice in fact... i imagine broccoli rice coming out denser and soggier with water content. but have to try it to know

Meh I got sick of white rice and tried cauliflower rice a few times and just couldn't get along with it. Now I use brown rice and though it takes ages to cook and is denser I use smaller portions find it much more satisfying.

- fry some sliced vegetables say mushrooms or leeks
- add beaten egg and tilt evenly round the pan
- put on some green leafy stuff like basil leaves or chopped parsley
- put cheese slices on top, and put on lid to melt the cheese
i could imagine brocolli rice going great in a sprinkled green layer, especially with the cheese melting into it
