They change taste over time, some do become bitter disgusting shit, others become treasures.

very few white wines improve with age. Some red wines, but not all, improve with age.

Hardly any normal modern mass produced wine is designed to be aged..They have a lifespan of 3-5 years.. After that they probably won't get any better and might oxidise. It'll probably be fairly obvious from the colour and certainly the taste.

Many spirits age in the barrel, not in the bottle.. So those would likely just stay the same and not improve.

I once found a can of Tenants lager in the garage that 25 years out of date, it had Linda on the can (Scottish people will know what that means) .. I drank it and it tasted fine.

Ok??? Well we can definitely say that Tennant's improves with age then.

I have to mention that a few years back visiting mum in the UK I headed out to the garage where the beer is normally kept and found a layer of Heineken, a grotty, industrial beer at best but it was beer so I opened a can, took a swig and found that it was delicious, absolutly one of the best beers I have ever had, rich and vollmundig it went down a treat.
It really did and I am not being over the top.
"Oh!" Mum says, "Did you find your dadīs beer?"
By this time Dad had been dead 10 years.

An elderly lady I know in Germany says that a full bottle of schnapps is OK to keep forever basically, same with a near-full bottle, but once you've finished about half, you have maybe a year to finish the rest as the air in the bottle causes the alcohol to evaporate out of the liquid and that causes it taste nasty.

Her explanation sounds a bit garbled to me so maybe she misunderstood something.
