Cheesemaking Community and/or Supply Store in Vaud region?

Hello!


I have just recently moved here (near Morges) and I would love to start making my own cheeses after watching lots of videos about it.


I found a nice farm just outside Nyon that has a vending machine for raw milk (if anyone can suggest something nearer I would be super happy).


Now I would like to find a supply shop where to buy the equipment that I currently don't have (cheese molds, veg rennet, cultures, etc.).
I am thinking of making my own cheese press or maybe buying a fruit press somewhere.


Also a little community of home-cheesemakers would be awesome to share tips and tricks on how to make the different varieties


Can anyone guide me towards the right direction?


[Note: I know I could buy lots of stuff online but for my very first attempts, I'd love to find something local to get the hang of it before going online]

Thanks @3Wishes.

It turns out that Switzerland doesn't have much support for making cheese at home.
But here is the information I managed to gather so far:

- Raw milk: This can be bought directly from certain "laiteries" (milk farms), just contact them and check the proper timing. You normally have to bring your own containers of course.
- Cheese press: You can easily make one yourself, just need some wood planks, wood cylinders and a drill. (If needed I can give links on this)
- Cheese molds: if you are making fresh cheese, such as ricotta, paneer or mozzarella, you can reuse containers you already have. For mature cheese, you will have to buy the proper molds + followers online, it's just easier that way.



- Cheese cloth: Buy online
- Cheese cultures: Buy online, I found some nice sellers in Italy.


Next week I will try to make some mozzarella, let's see

Paneer...yummmmmm. DIY paneer sounds delish. And you aren't too far either, I might be interested in watching you make it

I found another seller in that same area near Bern but I wish I found something in Vaud, just to have an easier access to the store.

Little heads-up for everyone who's interested: today I'll be attempting to make some fresh mozzarella and ricotta (not 100% traditional approach but for the first time I will cheat a bit ).

Is anyone interested in some short visual tutorial? I could take some pics along the way

In the meantime, I got Coop Karma paneer sittin' in my frigo, but afraid to open it, fry it n get down a lil.

I just finished making paneer actually!

The mozzarella experiment failed big times but I learnt a lot. First lesson: get a pH meter and most tutorials online don't use raw milk, so beware!

The one that I found and was deemed "more traditional" also includes some natural yogurt.


Here is the recipe:


- 1L Milk (I used raw but you can use whole too)
- 3 Tbsp Natural Yogurt
- 2 Tbsp Lemon juice


Bring the milk to a boil while stirring continuously, take off the fire.
Add the yogurt and mix in well, add the lemon juice and mix in well.
Wait for a few minutes that all the curds have separated from the whey.


Pour the liquid on top of a colander with a cheesecloth on top (any clean cloth with a fine fabric will do).


Wait for few minutes.


Take 2 planks (I used 2 cutting boards in wood) and place the curds packed in the cloth in-between.
Add 2kg of weight on top for 30min (I filled 2 bottles with a total of 2L to get the weight).
The curds will be pressed to get the right consistency for paneer. Make sure to place this construction somewhere the whey can drain (I placed it outside but you can also put it near your kitchen sink.)


Remove the weight, place the paneer in a sealed container and keep in the fridge until needed.



Note: the fridge part is important to get a firmer texture but you can use it right away.

If you save the used acid whey, you can give it to your roses or anything that loves an acidic soil (tomatoes too).

Just wanted to post some update on the cheesemaking learning I've been doing lately:


These are my very first baby wheels of cheddar. One plain and one with cranberries:



And today I just started drying my Goudas (as you can see I am quite bad at getting the shapes right ):




I am still deciding what cheese I'll try next
