We find ours useful for gin mixers when we want, or just plain fizzy water.

We've got one, which I rarely use as I mostly drink water, with milk coming in second ... I've found a few flavours which I like, but then I like some of the artificial flavours they put in medicines ... :/

I also remember the good ol' one with metal wire jacket around

We got one long time ago and don't use it. I actually don't think that carbonated drinks are good for tummies. I drink tap water with lemon in it, mint sometimes. It is never too cold, either.

I am not big on excessive kitchen machines, I guess.

As I have an open plan kitchen / dining room / livingroom I'm not a big fan of big kitchen machines either. I have 2 Billy bookcases in the hall with doors on that I use to store things away I don't need to have in the main kitchen units all the time. The toaster is in a cupboard as it isn't used every day, as is the smaller of my 2 slow cookers, the huge one is in the basement with my husband's Kenwood Chef. I keep a hand mixer and stick blender in the apartment. Don't have a coffee machine as OH uses the traditional type where you put the coffee in the bottom compartment, but I don't like it on my ceramic hob so he has a small hotplate for it that also comes in handy for stir frying with a wok. I haven't had a microwave since 2018 so I guess I don't need one

If you're wanting to replace sweet fizzy drinks, then it's not so clear-cut.
The concentrates are expensive and rarely, IME, give exactly the same result as buying cans or bottles. Then again, I very rarely drink 'pop' anyway, so my experience may not match that of a soda-addict.
Much less sugar and calories than sodas too so it's also healthier. Definitely loses something taste wise though.
