Substitute for Creme of Mushroom soup

Itís becoming more and more difficult to source creme of mushroom soup, which I like to use in cooking. I used to be able to get it at Jimís but they have been sold out for a couple of months. The American shop in Nyon also had it for a while but ...

Can anyone suggest a substitute or alternative?

Knorr cream of Stenpilz/Cepes/Porcini, with 1/3 the water.

Re: Substitute for Creme of Mushroom soup

Some years ago I used to use Campbells creme of mushroom in a chicken pie recipe that my brother in law showed me.

However, now I make my own sauce. I recommend the BBC good food app - lots of workable recipes for whatever you need - including chicken, leek and mushroom pie!

Re: Substitute for Creme of Mushroom soup

Thanks. The American Marketís prices are eye watering. Amazon.de doesnít seem to like Romandie. Thanks for the links, but Iíd like to find a Swiss alternative. I should have phrased my question better.

Re: Substitute for Creme of Mushroom soup

Try a box of Thomy mushroom sauce, available at Coop and Migros. If you find it too strong just cut it with a bit of milk or cream.

Yes, and you still should. I can only assume that you're referring to one specific brand and type that you've failed to specify. Cos otherwise it makes no sense at all, as there are loads of mushroom soups available in any supermarket, as others have posted.

Re: Substitute for Creme of Mushroom soup

I was curious if there was a "copycat" recipe for Campbell's cream of mushroom soup, as I know there is one for their cream of chicken soup, so I just looked it up and found this:

https://www.culinaryhill.com/homemad...mushroom-soup/

Looks like it received really good reviews, though it also looks like it has a lot more mushrooms in it than the Campbell's stuff. I know it's certainly not as easy as just opening up a can, though. (I once had to use a copycat recipe for Campbell's cream of chicken soup for a potato casserole dish that I make, and it turned out quite well).

I saw that there are also some other copycat recipes online for their cream of mushroom soup.

(But I'm sorry if that's not the kind of thing you're looking for...)

Re: Substitute for Creme of Mushroom soup

It's fun how many copycat recipes are on the 'net. Thanks for this one, Pancakes--I don't like that gloppy-slimy texture of Campbell's. Now I can make my 1980s chicken-cheddar-broccoli-mushroom-sour cream casserole. Just found a Trader Vic's Javanese salad dressing clone recipe, and it gave me a blast of nostalgia!

Re: Substitute for Creme of Mushroom soup

Powdered mushroom has become a kitchen essential for me,

I use the Coop brand dried mushrooms - they have several varieties, chose according to your taste, or mix 'em' up.

Using a spice or coffee grinder, pulverize the dried mushrooms. Keep the powder in a cool dry place.

A couple spoons-full added to any creamy sauce will give that same mushroom soup flavor. (Heck, don't limit yourself to creamed sauces, add it to pretty much anything you like!)

Re: Substitute for Creme of Mushroom soup

If you are trying to make a casserole, this is what I do:

Cook 1/2 chopped onion and 3 tablespoons of butter on medium-low heat until softened and translucent. Stir in 3 tablespoons of flour, garlic powder and pepper. Cook an additional 2 minutes.

Gradually pour in 2 cups of milk while whisking. Continue whisking over medium heat until thick and bubbly. Remove from heat and add dry mustard, paprika, 3 tablespoons of cream cheese, canned mushrooms and 1 Ĺ cups cheddar cheese. Stir until melted.

You're welcome. Yeah, some of those copycat recipes are nice and quite handy. I actually just used a copycat recipe for Lipton Onion Soup Mix last week that I had found online. It worked out well but was a bit too salty (will use less beef bouillon granules in the mix next time).

A chicken-cheddar-broccoli-mushroom-sour cream casserole sounds goooood.

Well, I guess that's not quite as bad as the "dog poop flavored ice cream" that my nine-year old jokingly asked for the other day. (He clearly has my DNA).
