Where to buy specialty/artisan bread flour?

I'm trying to find an online site to buy a variety of high quality flour. In the US this sort of stuff is pretty easy to get, e.g., through Central Milling or King Arthur Flour, which have a great selection both in terms of milling style and wheat. But in Switzerland all I can really find is basic white/pizza/bread flour at Migros and Coop, and a few limited variations, which work fine for some breads, but not for others.

Anyone have any suggestions on where to get good flour here? I'm even fine paying international shipping rates, but I can't find any online retailers that ship here.

Re: Where to buy specialty/artisan bread flour?

Where are you in Switzerland? (Your location still says USA.)

The town of Echallens is serious about their flour. The Maison du Blé et du Pain is a museum dedicated to wheat and bread, and each year the town holds a wheat and bread festival.

You can purchase a large variety of flours from the Echallen mill webshop. the website is only in French, but google translate can easily help you find out what the various flour mixes are composed of.

Re: Where to buy specialty/artisan bread flour?

The Echallens Mill site looks great -- that's exactly the kind of thing I'm looking for.

I'm in Zurich (thanks for the note about updating the profile), so getting out to Echallens is a bit of a track, but next time I'm over near Lausanne I'll check it out. Thanks!

Not an expert but you might find something along those lines in your local Landi. Here is the list - page in FR but you can Google to translate it for you.

You might stick your head into the Mühlerama Museum Shop.
I do not what they actually have, but they claim they have various flours.

Weichweizen (weiss, halbweiss, ruch, Steinmühle vollkorn und Spätzlimehl)
Hartweizen (feiner Griess, Senatore Capelli)
Dinkel (weiss, halbweiss, ruch, vollkorn)
Roggen (dunkel, hell, Steinmühle vollkorn)
Mais (Polenta, Ribelmais, Farina Bona)
Emmer (griess fein)
Einkorn (hell, dunkel)
Kastanien
Buchweizen
und diverse Mischungen (Zopfmehl, 4 - Korn, Kloster, Buure Mehl)

Yeah I second the landi idea, the larger Landis have a relatively good range of different varieties.

Re: Where to buy specialty/artisan bread flour?

I like flour from https://graf-muehle.ch/ No online shop, though.
Search results (I'm not familiar with any of those shops):
https://webshop.altbachmuehle.ch/shop
https://www.grueningermuehlen.ch/produkteliste-mehl/

https://mehlundfutter.ch/produkt-kategorie/mehl/
https://www.streich-muehle.de/mehle/
https://www.zinssermuehle.de/Mehl
https://www.muehlenverkauf.de/mehl/
https://bio1.de/produkt-kategorie/mehl/

Google "mehl online kaufen" or " mehl online bestellen". Farmy seems to sell flour as well.

What exactly do you need?

I usually buy flour at this place in Germany:
https://www.steigmuehle-engen.de/index.php

Though you'd probably have to ask if they have your special kind of flour.

You can also buy the grains there, if you have your own flour mill.

You can import 20kg per person per day (bread or flour, doesn't matter).

Re: Where to buy specialty/artisan bread flour?

There are many good mills around Switzerland selling spelt flour and other various grains. Type "Muhle" and "Mehl" and you might find some mills near your location.

Re: Where to buy specialty/artisan bread flour?

If you are up for a trip out to Einsiedeln - a lovely town worth a visit - stop by Grotzenmühle:
http://www.muehli-ladae.ch

It's been a while since I was last there - I think I remember hearing that the shop is/was/will be moving from the long time location into the mill building itself. So call first to confirm.

Known for their Ur-Dinkel flour.

Yup! That's where I used to buy my bulk flour... especially the Ur-Dinkel flour. I still only bake with spelt flour.
