What do you cook during Easter?
 
Easter is coming up soon and as last year I didn't cook anything that was "special for Easter", this year I decided I'll make an Italian Pasqualina Easter Pie (first time).

I'd like more "non-meat" Easter dishes ideas, and wondered what you all cook? We are not vegan and do eat fish, just no meat. If you have any pictures of it too, that'd be great! :)

Baby goat is our usual.

Not sure if we'll do one this year, as we just did a piglet Sunday.

We're having cabrito Dijon, rack of lamb with salsa verde, and bimi (broccolini). For dessert, pastel de nata.

OMG I will also do the Torta Pasqualina first time :)

Will also do "Gnocchi alla romana" - semolino based Gnocchi.

Then roasted asparagus, roasted carrots and lamb leg.

Colomba for dessert!

Tom: anything but vegetables, no? :)

We'll have both lamb and goat leg. I think goat meat is even tastier but I'm not ready to break up with traditions. :)

One year I did 1/2 each of baby pig, goad and lamb!

I do have a fail safe recipe of a torta Pasqualina, need to work through external hard disk ......to get it. It is not that difficult to make.

We only have a meal planned for Good Friday so far when the Pirate's daughter and her hubby come for dinner. I'll make some 4 courses with spring/Easter ingredients such as asparagus, morels, wild garlic, lamb and so, but don't know yet what exactly will end up on the plates, but for one entree.....canneloni alla fiorentina, because I need to harvest the last of the spinach in the allotment garden.

Then we want to BBQ once over Easter and plan also for a rich brunch on one of the holy-days ;)

Great idea on using the sprign ingredients, you made me thing of all the wild garlic so will add wild garlic pesto as apero on bread and also do a wild garlic leg of lamb recipe! Found this one which is simple enough but am doubting on using the anchovies.... :msncrazy:

I usually prepare a spring risotto with lovely fresh spring vegetables. Husband prefers a more hearty option like leg of lamb with potatoes ... I just can't bear to do that anymore after visiting the local lambs in Spring and witnessing their sudden disappearance come Easter.

This year, we will have our little bubble of friends come over on Good Friday and we will enjoy a traditional American BBQ. A bit sacrilege if you are religious hehe.

Am in shock......must have made a mistake when saving all files from my Silverspoon yahoogroup, which was my recipe and cookbook archive...... the folder on my external harddisk is empty.

Over 10 years of recipes and and such.....futsch :eek: as well as all the info/files from my Positively Swiss group, a kind of forerunner to the EF on Yahoo back then.

I can only take a pic of the intital recipe I used back then and post that, alas it is in German, but have lost all my own tweaks and info.

I am totally devastated, over 10 yrs work up the Swannee:(

Ahh, poor you. That really s****. Unfortunately I know the feeling as my new laptop stop working shortly after I had transferred everything onto it. Of course deleted all the transferred files...

The recipy looks interesting. I might try that. Last year we baked an Osterkuchen for the first time. That was also really nice. Might do it again this year. Not yet decided.

Ah, yes! A risotto with spring vegetables sounds lovely!

Thank you everyone for your ideas, all sound super delicious, incl. the traditional lamb etc. I just can't enjoy meat anymore, so I understand my Easter meals will obviously be less traditional but I can still pick some of the other dishes you all mention. :)

And Eastenders...ahhhhh, that is such a bummer! Would really get me down too :( Thank you for sharing your Torta Pasqualina recipe though!

The files may still be there.

I once deleted a couple of years of photos in a couple of folders on a hard drive and got them all back with a free utility.

The files will still be on the drive unless either overwritten (all or partially) or you have reformatted the drive.

This was a few years. I'm sure someone can recommend a more current piece of software to do that.

I would not leave out the anchovies--they will not be readily apparent in so small an amount, but they will give umami to the dish. It's like adding nam pla to a Thai dish...even with chicken.
