Nice work... Here is another helpful link regarding flour in Switzerland: swissmill. They produce much of the flour that makes its way into Swiss grocery stores. The site is also in English for those who do not understand German.

Jack! thankyou very much. I have incorporated the info from Swissmill as best I can. In the end it is an adventure for each person in any case! By your avatar I have to guess you are one half of the laughing lemon couple! I really admire your site, and the way you have put information together on seasonality. Since coming to Switzerland from the Southern hemisphere we are really starting to appreciate this aspect of European food. Somehow growing up on the eastern seaboard of Australia doesn't really encourage the same appreciation! I look forward to further browsing on your site, and information as the year rolls on. cheers Paula

obviously it depends on the recipe and the flour, but I usually use normal flour with a large teaspoon of baking powder per 110g (Delia Smith's reccomendation).

Self-raising flour is a mix of flour,baking powder AND baking soda. I don't know the mesures though. I'll try to find them and post them.(I worked as a baker in Ireland)

Baking flour

Hey folks -

Over the past few years I've found that, when baking American cakes here, the Coop Prix Backmehl works best; it seems to be the closest equivalent to cake flour back in the ol' US of A.

However, I've not yet managed to find something similar at Migros. While they have way too many varieties of flower, they don't seem to have an equivalent for Backmehl. I'm just curious - am I missing something? Is there a better option out there?

has it, as well as other products from the states you may need. The staff speaks a little english and can help but I saw the SRF this past week I needed it for Thanksgiving ..too bad I found it a few months late!
