Re: Can I buy brown sugar here??

A well-stocked Reformhaus stocks quite a range of different brown sugar varieties (from dark palm sugar to muscovado). The brown sugar that is often used in the UK and America is a processed sugar mixed with molasses. It is important in baking recipes primarily because of the acid that is present in the molasses (this reacts with baking soda to create leavening). With a lot of hunting, and paying a substantial amount, brown sugar can be found in Globus, although the taste is way too heavy on the molasses. Another option is to simply make your own...

This very good substitution is simple to make and tastes quite a lot like the brown sugar you are probably used to eating. You will need two ingredients: dark molasses (melisse) and extra fine sugar. The molasses is best purchased from a Reformhaus...look for ones that do not have artificial flavoring added. The extra fine sugar is available in all Coops - it is called feinster Zucker. The method is easy...it is made by combining 15 gr. of molasses with 100 gr. of the sugar. Mix the two ingredients very well using your fingers to make sure all clumps are eliminated. Keep the sugar in an airtight container at room temperature. It is better one day after making it. For a lighter version, use less molasses, and visa versa....To make 2 cups of brown sugar, you will more than likely need to use around 250 gr. of sugar and about 42 gr. of molasses.

Good luck and happy baking!
Jack

You can get it in France-- both light (blonde) and dark (brune) at Carrefour, Eco/Intermarché, and Leclerc. It's the real stuff, and my Tollhouse cookies turn out amazing!

The brown sugar we use in the US is not the same as Rohzucker. I don't think I've ever seen brown sugar in Switzerland. I buy brown sugar from supermarkets in France (e.g., Carrefour, Geant, etc.) Is is called Vergeoise Brune.

Re: About Brown Sugar...

and there is both light and dark soft brown sugar available in the same shopping centre, in that little asian shop, Phil's something.

Also, Basel people without cars might be interested - the centre will be open on sunday, 3rd of April and offers free shuttle buses from Basel, see here:

Cassonade is NOT brown sugar. It's raw sugar but a little darker. You can find it in Coop at a horrendous price if you still want to try it.

Raw sugar is brown sugar. Or at least one form of it. The bland sanitised stuff is raw sugar refined to white sugar, then the drawn off treacle (molasses) is added back in again in regulated amounts. You can make your own "brown" sugar the same where. Anyone know where you can buy treacle?

Lyles Golden Syrup is made as the treacle is taken from raw sugar during refining. The Golden Syrup they make for the supermarkets is made from refined white sugar with homogenous treacle added.

I used to work for Tate and Lyle Sugars, so I know this stuff.

Re: Where can I buy brown sugar here?

Ah ha! I'm glad to see this pop up as I recently was in a "reformhaus" type store and picked up "mascobado" brown sugar.

I made some (peanut butter) cookies with it yesterday and although the flavor and smell is alright, the cookies flattened more than I expected.

Soooo, if you're using it for drinks or whatever, it should be just fine, for cookies though, doesn't seem quite right.
