Waiting for BelgianMum's and Kristanez's verdict. Is the Belgian brown sugar from my little supermarket the real Mc Coy or not? If so, I'll offer to send some against postage to all EF'ers who'd like some.

Wow, what a long, and old, thread. Started reading at the top when I saw a new post, but soon realised that was not a good idea.

Anyway, proper soft brown sugar is now available in our local supermarket in France, where they seem only in the last few years to have started catering for real home bakers. Or maybe it's just cos there's more of us etrangers around these days...

Tate & Lyle Demerara is now available in the E-Center Laufenburg (left at the roundbout just after customs coming from Switzerland, straight on for 500 m). € 3.49 for a 1 kg bag.

If this has already been mentioned, I apologize, but... there are now too many pages to scroll through.

In any case, BritShop.ch seems to be an excellent resource for obtaining British and American baking ingredients.

For example, check out the assortment of brown sugars they offer.

I have bought some from DM in Germany both the light and dark brown sugar. Also in relation to another post in this thread, baking soda you can purchase in larger quantities from your local drogerie.

Brown sugar is a staple ingredient in Asian cooking (as well as baking). Check your local Asian store -- you can find it in the NAM market located near Backeranlage.

What an old thread, but I was recently wondering this myself and found it.

Definitions of demerara
noun
partially refined light brown cane sugar coming originally from Guyana.

The light brown part is enough for me. This "demerara" sugar is great!

I'd say the fact that demerara is partially evaporated sugar cane juice, spun in a centrifuge to remove almost all of the molasses makes it rather different to brown sugar which contains at least 4.5% molasses.

Great Marketing. Now read the packaging and see that the brown coloring is due to caramel and it's artificial. In other word it's colored white sugar.
Of course, at a premium price.

The packaging[1] does not have an ingredients list per se, I guess it is because it is only one ingredient? Which is raw cane sugar (cubes) so for me it is brown sugar.

[1] I am referring to the package showed in a picture in an early reply of mine.
