It's hard to cook or bake for one. Thankfully I have work collegues which do not mind "helping" me with this "problem".

Pancakes with cottage cheese and apples, baked pierogi with tuna and feta and tiramisu roulade :)

Today I attempted to make banana nutella crepes for the first time. I think I may have overdid it on the nutella. The crepes were actually kind of hard to make. But the end result went into my tummy just fine. ;)

I decided to celebrate my birthday this year with a twist, so I had a 'kiddies' party, with a twist of course.

Coffee cupcakes with Kalua chocolate ganache
Vanilla cupcakes with Amarula caramel icing
For savoury palates there were 3 types of mini quiche (spinach & feta, bacon and mushroom)
My shoe cake took centre stage :-) while prosecco and Cosmopolitans flowed like Cool-aid, it was a fantastic afternoon!

This was part of my "wooing strategy" directed at my recently found love interest, who is from Galicia. He was happy:).

Calamares a la gallega - calamari with tomatoes, potatoes, and garlic.

Buñuelos de aceitunas - black olive fritters with sundried tomatoes.

Croquetas de queso - cheese croquettes

Pulpo con patatas - octopus with potatoes, otherwise known as "pulpo a la gallega"

Tapenade de tomate y queso - tapenade sauce made with olives, tomatoes and cheese. For a little twist, I added a few drops of aceto balsamico.

I also made Empanadillas de gambas (filled with shrimps, tomatoes and green peppers) but did not take a picture unfortunately.

Tried to make cute egg chicks for Easter. Was kind of a disaster, as the eggs kept breaking when I was trying to assemble them. But I managed to salvage a few for a picture... :o

Black forest muffins from the top and the bottom, traditional Polish Easter cake called mazurek, this one in the orange version, milk bread and chicken in sweet onions :)

That was a busy week. Baked pretty much every day ;)
Italian bread with pesto, ham, mushrooms and cheese for a picnic, layered cake with honey and cream and a cream cheese yeast twist with crumble for my bday, light meringue cake with nuts, cranberries, figs, chocolate and mascarpone for my friend's bday and a yoghurt cake with pears and apples :)
