Those look yummy. You can look up the poppy seed filling on the internet.. the one recipe I had said to grind them in your blender. I tried to grind them in my blender... too bloody small. Basically, you boil down poppy seed with something sweet - like honey and get a paste.

I didn't photograph my cookie ones, but jam works really well in them because although they puff up, they don't rise. For yeast ones, you need a little weight in the filling. We did apricot, chestnut and chocolate filling in the cookie ones. My husband ate them before I could photograph them.

Normandy apple pie and Scandinavian apple-rhubarb pie (recipes from fxcuisine), both without pastry base:
(The second one has a lovely caramelised crisp topping.)

Recipe comes from this blog http://mojewypieki.blox.pl/ which unfortunately is mostly in Polish, though some recipes are also in English. Dorota is a wife/mother/amazing cook living in Wales with a husband and two daughters. Lots of recipes there and for my newly discovered passion they are amazingly easy and yummy :)

Anyway I translate the recipe for you here:

New York style cheesecake

Ingredients for the bottom and sides:
250 g of Digestive cookies (I am buying them in Coop, small box is exactly the amount you need)
125 g of melted butter

Ingredients for the cheese part:

750 g of cheese (I use BioQuark from Coop, used some other brands but this one is the most creamy)
3 big eggs
220 g of sugar powder
180g of sauer cream
2 tsp of lemon skin
60 ml of lemon juice (just squeeze the poor skinless lemon ;))

It is necessary to fill the form with aluminum foil (see this link http://mojewypieki.blox.pl/2007/03/S...owojorski.html, in the bottom she shows how to do it) because the cheese part is not dense enough. Smash cookies and mix it with melted butter (it should look like a wet sand). Then cover the bottom and sides of the form with it. Afterwards put it in the fridge for around 30 minutes.

Heat up your oven to 170 degrees. Mix all the ingredients of cheese part, pour it into the form covered with cookies. Then put some alu foil on the top (it prevents the cake from getting brownish) and place it in the oven. You need to bake it till the moment the middle will look like a jelly and will not be liquidish anymore. It takes me around 2 hrs to bake it till that point (try and not do it longer than that, cake may become too dry). After that's done, I am placing it in the fridge overnight and the next morning I am enjoying it with my morning coffee :). Bon appetit!

Bioquark??? use Philly cream cheese, much better proven results
